High Protein Greek Banana Bread🍞🍌

I’ve made a ton of banana breads, who are we kidding. All variations, many many recipes- but this one HITS THE SPOT! It’s soft & fluffy on the inside a little crispy on the outside. Not too sweet, packed with protein & I think it may just be your new fav!🤭 Recipe below⬇️

Ingredients:
• 2 cups all-purpose flour
• 2 scoops vanilla protein powder
• 1/4 cup mixed brown & white sugar
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 3 very ripe, darkly specked bananas, mashed well (about 1 ½ cups)
• 1/2 cup plain Greek yogurt (nonfat or regular)
• 2 large eggs
• 1/4 cup olive oil
• 2 tbsp melted butter
• 1/4 cup maple syrup
• 2 1/2 teaspoons vanilla extract
• 1 cup chopped walnuts, pecans or chocolate chips

Directions:
1. Preheat the oven to 350°F. Butter a 9 inch bread pan.
2. In a large bowl, whisk together the flour, sugar, brown sugar, baking soda, protein powder and salt.
3. In a separate medium bowl, whisk together the mashed bananas, eggs, Greek yogurt, olive oil, maple syrup and vanilla extract.
4. Add the wet ingredients to the dry ingredients and stir until combined. Stir in the chopped nuts or chocolate chips then scrape the batter into the prepared loaf pan.
5. Bake the bread for 50 to 60 minutes, until a toothpick inserted comes out clean.
6. Remove from over & cool if you can wait! ENJOY🤭
