🍲 Spicy Turkey Sausage & Kale Chili
Warm up with this hearty, flavor‑packed bowl, perfect for weeknight dinners!

Yields: 6 servings
Prep Time: 20 min · Total Time: 1 hr

Ingredients

1 Tbsp extra‑virgin olive oil
1 lb ground spicy turkey sausage
1 large yellow onion, finely chopped
1 red bell pepper (seeds/ribs removed), finely chopped
2 cloves garlic, finely chopped
1 Tbsp chili powder
1 tsp cayenne pepper
1 tsp dried oregano
Kosher salt (to taste)
2 Tbsp tomato paste
3 cups low‑sodium chicken broth
1 (15‑oz) can cannellini beans (rinsed & drained)
1 (15‑oz) can diced tomatoes
1 large bunch Tuscan kale (stems & large center ribs removed, leaves torn)
Sour cream for topping (optional)

Directions

In a large pot or Dutch oven over medium heat, heat the olive oil. Add the turkey sausage and cook, stirring occasionally, until browned and cooked through, approximately 6 minutes.

Add the onion, bell pepper, garlic, chili powder, cayenne, oregano and salt. Cook, stirring until the vegetables are tender, approximately 6‑7 minutes. Stir in the tomato paste and cook for about 1 minute until slightly darkened.

Add the chicken broth, cannellini beans and diced tomatoes. Bring to a boil, then reduce heat to medium‑low and bring to a simmer. Add the torn kale and season with salt.

Simmer, stirring occasionally, until the chili has thickened, about 30 minutes. Serve hot, topped with sour cream and any optional toppings, such as sliced avocado or crushed crackers.

🍁 Fall Foods for Better Health🍁

As the air gets crisper and we swap sandals for sweaters, nature gives us some of the most nutritious, comforting foods of the year. Eating seasonally in fall can mean more flavor and health.

🥗 Recipe: Roasted Butternut Squash & Quinoa Autumn Salad

Ingredients:

1 medium butternut squash, peeled and cubed
1 cup quinoa, rinsed
2 cups kale (or mixed fall leafy greens), chopped
1 apple (firm variety), thinly sliced
½ cup chopped walnuts
Optional: crumbled feta or goat cheese

Dressing:

¼ cup olive oil
2 Tbsp apple cider vinegar
1 Tbsp Dijon mustard
1 Tbsp honey or pure maple syrup
Salt & pepper to taste

Directions:

Preheat oven to 400°F. Toss the butternut squash cubes with a little olive oil, salt and pepper. Roast for about 25‑30 minutes, until tender and lightly caramelized.

While the squash roasts, cook the quinoa according to package instructions; let cool a bit.

In a large bowl, combine the roasted squash, quinoa, chopped kale, sliced apple and walnuts. If using, add the cheese. Whisk together the dressing ingredients in a small bowl. Pour over the salad and toss gently. Adjust seasoning as needed.

🌸 Ovarian Cancer Awareness Month
Often called the "silent killer," ovarian cancer is frequently diagnosed at advanced stages in 60 - 70% of cases, with early-stage diagnosis (Stages I–II) offering survival rates around 70 - 90%, as compared to only 10 - 30% in later stages. Being alert to symptoms like persistent bloating, pelvic pain, or feeling full quickly can make all the difference.

💙 Prostate Cancer Awareness Month
Prostate cancer remains the second leading cause of cancer death among U.S. men after lung cancer, with nearly 1 in 8 men facing a diagnosis in their lifetime. Remarkably, when detected early, survival is excellent - over 95% at five years. Yet 80% of Americans don’t recognize early symptoms, which are often silent unless discovered through routine screening.

How You Can Help or Stay Safe
• Women: If you experience persistent bloating, pelvic or abdominal pain, or early fullness, talk with your doctor.
• Men (especially 45–69, or 40+ with higher risk): Discuss prostate screening options, including PSA testing, with your healthcare provider.
