Pizza night! Everyone loooved it!
Toppings -
Pesto (1 small jar)
Greek chicken (leftovers from earlier in week)
Kalamata olives
Purple onion
A few tomatoes

Crust -
2 bags frozen Rainbow cauliflower (steamed first)
3 Whole eggs
1 cup mozzarella and parm mix shredded cheese
2 tsp Italian seasoning
1/2 tsp garlic salt

Mix crust ingredients in a food processor, pulsing a few times till just mixed.

Spread crust on a parchment lined baking sheet and cook at 425 for 20 minutes. Check and cook 5 more minutes if needed.

Add toppings and cook for 5 to 7 minutes.
(I like to cook for 5, then broil for 2 to crisp up.)

How to support your Food Peace & health goals while eating out:

1. Focus on ample, non-breaded protein (steak and eggs here)
2. Include veggies (peppers, onions, and leafy greens here)
3. Ask for the fried potatoes to be left off the plate (it's HARD to resist 'em if they are in front of you!)

Had a lovely brunch out with my Sophie who's home for her spring break from college. We both got the Chimchurri Steak and Eggs Hash Special at First Watch. She had the 'taters, I skipped them. We both left full, happy, and oh so satisifed!

Now, it's not that I don't sometimes eat potatoes. They are whole foods and I do enjoy them on occassion. Here's what I've learned works best for *me* and supports my entire day, my insulin, my cravings, and my hunger/satiety hormones:

1. Fried potatoes at a restaurant are soooo yummy - but they are rarely fried in good fat *and* the portions are huge. WAY more carbs than I need for sure, but so easy to over do.
2. I used to kid myself that sweet potato fries were somehow "healthier". No. No they aren't. In fact...
3. I've learned in the past 2 years that sweet potatoes (even when cooked healthy) cause insatiable cravings *for me* and I'm not doing myself any favors by choosing them over small baby potatoes or small golden potatoes.
4. If/when I do have potatoes, it's not at my first meal of the day. That sets me up for food noise, desire to eat more often than truly needed, cravings, and difficulty keeping my portions sane.
5. If/when I do have potatoes, it'll be at my last meal of the day (maybe once every week or tow), at home, roasted in the oven with good fat, and eaten LAST at my meal. FOOD ORDER MATTERS. Do I "have to" eat them last? Of course not! There are NO RULES, just tools. And this tool greatly helps my glucose and thus insulin levels at night/before bed and helps with more restful sleep. I'm all for that!

So, next time you go to First Watch and you see their yummy "hash" special, know that you'll be doing sooooo many good things for yourself by leaving the potatoes in their kitchen that morning! PLUS - so delicious!
