And here's the question that always gets asked: "What about *refined* coconut oil?"

Refined coconut oil is fine to use - I sometimes use it for pan-frying protein. And it isn't *inflammatory*, but it doesn't back the ANTI-inflammatory punch that unrefined coconut oil does. So feel free to use it, but be sure to include either unrefined coconut oil, or if you don't like the taste of coconut, or better yet - organic avocado and/or cold pressed olive oil.

Why yes, yes I DID have chicken salad salad for BREAKFAST! Why not?!!!

Stop boxing yourself in with "breakfast foods".

Eat leftovers.
Eat chicken salad.
Eat chili.

Eat whatever is going to support you the BEST and help you show you to the day and the world the way you want to show up.

Bonus points because chicken salad can be batched made ahead on Sunday or Monday and enjoyed throughout the week!

NO COOKING/reheating needed when you are in a hurry in the morning! Just plop on top of some greens and GO!

My chicken salad "recipe" (it's not much of one, lol!)
Instapot cooked chicken, shredded with my hand mixer
Chosen avocado mayo
Some random seasoning blend I grabbed without half looking
Chopped pecans

Under my plop - microgreens and sliced radishes + 1 TBSP evoo
Untop of my plop - fermented pickle & a little monkfruit/allulose sweetener

I closed out my breakfast with a little 90% dark chocolate and a creamy cup of coffee.

All of that kept me happy and satisified for 5 hours easily. That gave my hard-working insulin a break and showed me that this meal was full of a wonderful amount of macros *and* micros that truly nourished me.

Give chicken a salad a try at breakfast. Why not? If Chick-Fil-A can have a double line wrapped around it's drive thru at 8am with people buying chicken biscuits, you can certainly eat a healthier chicken entree for breakfast. ;)

Alright, ladies!!! What do you have on your agenda this weekend?

Me? A little extra eating away from home due to busy schedule, but making my BEST choices all the while, and showing up to usher/greet for the highschool show my son is in! Pirate show, although he's actually playing a Lord married to a lovely lady. 😁

I got this tee to wear - "Why be a princess when you can be a pirate?" LOL!!! Not sure I fully agree with that, but I LOVED the design and I'm always for a strong woman who gets things done ;)

PS --- it truly is easy and doable to make good choices while eating out! Protein + veggies - keep it simple!

Simplify your eating and take the stress and worry out of it.
Protein + veggies + berries = great combo!

Why this works so well:
1. NO recipe needed. Seriously. Just season and grill/roast/saute whatever works
2. FRESH, whole foods. THIS is what your body expects and needs!
3. EASILY adjustable to whatever you have on hand.

And yes... I DID share those berries with hubby and son. :)

Here's how I ate this to further support satiety and best glucose management:
1. I had the green beans first.
2. Next the steak - YUM!
3. Then the small amount of roasted baby golden potatoes.
4. And closed out the meal with the strawberries (and a cup of creamy decaf coffee:)

Do you *have* to eat your food in a certain order?

Of course not.

I often do, though, because I want to prioritize protien and lower carb fiber sources and I don't want to fill up or curb my appetite on higher carb foods... then not be able to fully eat my protein and lower carb veggies!

In fact, by the time I got to those baby 'taters, I didn't want or have room for all of them - especially since I knew I wanted a few in-season, farm-fresh strawberries, so I put a few of the potatoes back for leftovers. :)

This was a simple FAMILY PLEASING meal - nothing weird or "diety" here!!! EAT REAL FOOD, Y'all! ;)
