Had the best chicken salad in Lancaster this summer so I had to recreate it and enjoy it in a lettuce wrap for lunch. Recipe below:

- One full, cooked, rotisserie chicken, shredded - I got mine from .oysterbay and it was delicious!
- 1/4 cup red onion, chopped
- 1/2 cup celery, chopped
- 1/4 cup full fat, plain greek yogurt
- 1/4 cup olive oil mayonnaise
- 2 handfuls candied walnuts
- salt and pepper to taste

You can also add cranberries for a sweet addition!
