Craving something sweet? These VEGAN chocolate chip cookies are rich, chewy, and totally safe to eat raw. ๐Ÿช

Ingredients:

2 cups gluten-free all-purpose flour

1ยฝ tsp baking powder

1 tsp baking soda

1 cup coconut sugar

ยฝ cup coconut oil, melted

โ…“ cup well-stirred tahini

ยผ cup plant-based milk

6 to 8 oz vegan dark chocolate chunks

1 tsp kosher salt

Instructions:
Preheat your oven to 350ยฐF. In a large bowl, whisk together the flour, baking powder, baking soda, coconut sugar, and salt. Add the coconut oil, tahini, and plant-based milk, then mix well. Fold in the chocolate chunks.

Chill the dough for 10 to 15 minutes. Scoop it into 2 to 3 tablespoon-sized balls and place them on a parchment-lined baking sheet.

Bake for 12 to 15 minutes, until the edges are golden and crisp and the centers stay soft. Let cool slightly, then enjoy every gooey bite. ๐Ÿ˜‹

๐Ÿฌ Craving something sweet and wholesome? Try these Paleo Gingerbread Energy Bites for a simple, nutrient-packed treat.

Ingredients:

1 cup Medjool dates, pitted

1 cup almonds

1/4 cup unsweetened shredded coconut

1 tbsp blackstrap molasses

1 tsp ground cinnamon

1/2 tsp ground ginger

1/4 tsp ground nutmeg

Pinch of sea salt

Instructions:

1. In a food processor, combine dates, almonds, coconut, molasses, cinnamon, ginger, nutmeg, and salt. Blend until a sticky, dough-like mixture forms.

2. Using clean hands, scoop small portions and roll them into bite-sized balls. For extra texture, roll them in shredded coconut.

3. Chill for at least 30 minutes to firm up the bites and enhance the flavors.

Once chilled, these energy bites are ready to enjoy or store in an airtight container for a quick, nutritious snack. ๐Ÿฝ๏ธ
