๐ **Recipe: Warming Pumpkin & Ginger Congee** ๐
**Ingredients:**
- 1 cup short-grain rice
- 6 cups water or vegetable broth
- 1 cup pureed pumpkin (fresh or canned)
- 1 tablespoon fresh ginger, grated
- 1 tablespoon soy sauce or tamari
- 1 tablespoon sesame oil
- Green onions and sesame seeds for garnish
**Instructions:**
1. Rinse the rice under cold water until the water runs clear.
2. In a large pot, combine the rice and water or broth. Bring to a boil.
3. Reduce heat and simmer for about 30 minutes, stirring occasionally, until the rice is soft and the mixture has thickened.
4. Stir in the pumpkin puree, grated ginger, soy sauce, and sesame oil. Cook for an additional 5 minutes.
5. Serve warm, garnished with green onions and sesame seeds.
