I’ve been looking for ways to make it easier to eat fresh foods without pushing myself too far, and recently discovered Garden Cup. They deliver fresh salads, soups, and more right to my door. I got my first order earlier this week and so far, everything has been amazing.

It’s the year of the fiber and here’s an easy way to sneak some in even the easiest meals. Two words: chia seeds. Sprinkle these bad boys on yogurt or oatmeal, mix into smoothies, put in between the pb and the j. Add a little crunch and a nutrient rich fiber punch.

Sometimes you want to eat healthy but you are running on fumes. Instead of hitting the drive thru, you could make this two-minute been and cheese burrito. Spread some refried black beans on a low carb, high fiber tortilla. Add salsa and cheese of your choice. Microwave for a minute. Your high fiber, protein rich meal is done.

This lemon quinoa and chickpea salad is a refreshing way to pack in nutrients and flavor.
