🥗 Beet & Arugula Salad
Ingredients:
- 2 medium beets, roasted and diced
- 4 cups arugula
- 1/2 cup crumbled feta cheese
- 1/4 cup walnuts, chopped
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
Directions:
1. In a large bowl, combine the roasted and diced beets, arugula, feta cheese, and walnuts.
2. In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper.
3. Drizzle the dressing over the salad and toss to combine.
4. Serve immediately and enjoy!
