Simple, elegant, and cozy, these gluten-free sweet potato rounds are topped with creamy goat cheese and a drizzle of honey. A crowd-pleasing fall appetizer with endless topping options, perfect for entertaining or snacking by the fire.

Ingredients:
• 2 large, sweet potatoes, scrubbed and sliced into ½” rounds
• 2 tbsp olive oil
• ½ tsp sea salt
• ¼ tsp fresh ground black pepper
• 3 tbsp honey
• 1 tbsp chopped fresh thyme or rosemary
• Optional toppings: chopped walnuts, pomegranate seeds, or crushed pistachios

Directions:
1. Preheat oven to 425°F. Arrange sweet potato slices on a parchment-lined baking sheet. Brush both sides with olive oil, sprinkle with salt and pepper. Roast for Half Box-25 minutes, flipping halfway through, until golden and tender.
2. While the sweet potatoes roast, let the goat cheese soften at room temperature. Whip with a fork or hand mixer until creamy for easier spreading.
3. Once the rounds are cool enough to handle, top each with a dollop of whipped goat cheese. Drizzle with honey and garnish with fresh herbs or optional toppings.

Crunchy veggies and a tangy sesame dressing make this bowl a winner. Perfect for a light lunch or an easy side to a larger meal.

Ingredients:
• 2 cups shredded cabbage
• 1 cup shredded carrots
• ½ cup edamame
• ¼ cup sesame dressing (store-bought Asian sesame dressing or combine 1 tbsp each: soy sauce, white vinegar, olive oil, sugar + 2 tbsp toasted sesame oil; whisk until combined)

Directions:
1. Toss cabbage, carrots, and edamame with sesame dressing.
2. Serve chilled, garnished with sesame seeds and sliced green onion for an extra kick.

A hearty salad with chickpeas, cottage cheese, cucumbers, and red onions, tossed in a light vinaigrette. It’s high in protein, veggie friendly, and so satisfying!🥗

Ingredients:
• 2 cups cottage cheese
• 1 (15oz) can chickpeas, drained and rinsed
• 2 cucumbers, diced
• ½ red onion, thinly sliced
• 2 tbsp extra virgin olive oil
• 1 tbsp red wine vinegar
• Salt and pepper to taste

Directions:
1. In a large bowl, combine the cottage cheese, chickpeas, diced cucumbers, and sliced red onion.
2. Drizzle with olive oil and red wine vinegar and season with salt and pepper.
3. Toss well and serve immediately.
