Fresh, colorful, and entirely plant-based, this gluten-free and vegan salad is the perfect 15-minute addition to any meal. Healthy, vibrant, and delicious!🥗

Ingredients
• 4 cups mixed greens
• 1 medium Asian/Bosc pear or Honeycrisp apple
• ½ cup toasted nuts (ideally hazelnuts or almonds)
• ½ cup vegan goat cheese (or regular goat cheese if preferred)

Vinaigrette
• ¼ cup extra virgin olive oil
• 2 tbsp fresh lemon juice
• 1 tbsp apple cider vinegar
• Flaky sea salt and freshly ground pepper to taste

Directions:
1. Prepare the Vegan Goat Cheese: If you opt for the vegan goat cheese, whip it up at least 30 minutes in advance to allow the flavors to meld beautifully.
2. Toast the nuts: In a skillet over low-medium heat, using hazelnuts or almonds, toast for 6-10 minutes until lightly golden.
3. Make the vinaigrette by combining the olive oil, fresh lemon juice, and apple cider vinegar and mix or shake well to combine. Then toss the mixed greens in a large serving bowl until evenly coated.
4. Add the pear/apple and nuts by gently folding them into the dressed greens.
5. Just before serving, adorn the salad with your prepared vegan goat cheese, giving it that gourmet touch.

Stuffed Spaghetti Squash with Broccoli, Sausage, and Cheddar Cheese is a simple dinner that a whole family will love. It's keto, low-carb, gluten-free, high in protein and fiber. You can easily make it dairy-free by using dairy-free cheddar cheese. Using spaghetti squash is a great low-carb alternative to regular pasta recipes!

Ingredients
• 2 medium spaghetti squash
• 3 tbsp extra virgin olive oil
• 16 oz Italian ground Italian sausage, crumbled
• 10 oz broccoli florets (about 4-5 cups)
• 6 oz cheddar cheese, shredded

Directions:
1. Preheat oven to 400 degrees. Line a large baking sheet with parchment paper.
2. Cut each squash into two halves and scrape the seeds and fiber from each half. Before cutting, make several large slits in the squash and then microwave for 5 or 10 minutes to soften the skin, making it easier to cut.
3. Drizzle olive oil on all sides of the squash and season generously with salt and pepper.
4. Place all four squash halves, cut side down, on the prepared baking sheet.
5. Roast 30-40 minutes or until soft. Remove from oven and set aside.
6. Heat a large tablespoon of olive oil on a large, high-sided skillet. Add sausage and broccoli florets to skillet and cook until meat is browned and broccoli has softened. Drain any excess oil or grease.
7. Divide the sausage/broccoli mixture among the four halves and stuff squash until leveled, topping with shredded cheddar cheese.
8. Roast for 10-15 minutes.

Creepy, fun Halloween bark made with healthy, protein-packed Greek yogurt. Perfect for anyone getting into the holiday spirit🕷

Ingredients
• 2 cups plain or vanilla Greek yogurt
• Green food coloring
• ¼ cup mini chocolate chips
• ¼ cup gummy words (or other Halloween-themed candies of your choice)
• Candy eyes

Directions:
1. Line a baking sheet with parchment paper.
2. In a bowl, mix the yogurt with a few drops of green food coloring until you reach the desired shade. Don’t overmix if you’d like the marbling effect seen here.
3. Spread the green yogurt evenly onto the prepared baking sheet
4. Sprinkle the mini chocolate chips, gummy worms, and candy eyes over the yogurt.
5. Place baking sheet in the freezer and freeze for at least four hours.
6. Once frozen, break the yogurt bark into pieces and serve immediately.
