Simple, elegant, and cozy, these gluten-free sweet potato rounds are topped with creamy goat cheese and a drizzle of honey. A crowd-pleasing fall appetizer with endless topping options, perfect for entertaining or snacking by the fire.
Ingredients:
• 2 large, sweet potatoes, scrubbed and sliced into ½” rounds
• 2 tbsp olive oil
• ½ tsp sea salt
• ¼ tsp fresh ground black pepper
• 3 tbsp honey
• 1 tbsp chopped fresh thyme or rosemary
• Optional toppings: chopped walnuts, pomegranate seeds, or crushed pistachios
Directions:
1. Preheat oven to 425°F. Arrange sweet potato slices on a parchment-lined baking sheet. Brush both sides with olive oil, sprinkle with salt and pepper. Roast for Half Box-25 minutes, flipping halfway through, until golden and tender.
2. While the sweet potatoes roast, let the goat cheese soften at room temperature. Whip with a fork or hand mixer until creamy for easier spreading.
3. Once the rounds are cool enough to handle, top each with a dollop of whipped goat cheese. Drizzle with honey and garnish with fresh herbs or optional toppings.
