The Mediterranean way of eating isn’t about restriction—it’s about abundance🍋
These Mediterranean Ground Turkey Bowls bring herb-packed protein, zesty lemon rice, and crisp veggies together for a high-protein meal prep that tastes amazing.

Turkey Skillet Ingredients:
• 1 lb. lean ground turkey
• 1 tbsp extra virgin olive oil
• 1 sweet yellow onion, diced
• 3 cloves garlic, minced
• 1 tsp dried oregano
• 1/2 tsp dried basil
• 1/2 tsp paprika (smoked or sweet)
• 1/2 tsp salt (plus more to taste)
• 1/4 tsp black pepper
• Red pepper flakes (optional, for heat)

The Lemon Herb Rice:
• 1 cup uncooked white rice
• 2 cups chicken broth
• 1 tbsp extra virgin olive oil

The Toppings:
• 1 cup cherry tomatoes, halved
• 1 English cucumber, diced
• 1/4 cup red onion, thinly sliced
• 1/2 cup Feta cheese, crumbled
• Tzatziki sauce (store-bought or homemade) for drizzling

Directions:
1. Rinse your rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice, chicken broth, butter, and a pinch of salt. Bring to a boil, then reduce heat to low, cover tightly with a lid, and simmer for 15–18 minutes. Once cooked, remove from heat and let it sit covered for 5 minutes. Then, fluff with a fork and stir in the lemon juice, lemon zest, and fresh parsley.
2. While the rice cooks, heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 3–4 minutes until softened and translucent. Add the minced garlic and cook for just 30 seconds until fragrant.
3. Brown and drain the ground turkey. Season with oregano, basil, paprika, salt, pepper, and red pepper flakes over the turkey. Stir well to coat the meat evenly. Add a splash of water (about 1 tbsp) or broth to the pan to help the spices “bloom” and coat the turkey in a savory glaze. Simmer for 1 minute, then remove from heat.
4. Divide the lemon rice among four meal prep containers or bowls. Top with a generous scoop of the savory turkey mixture. Arranged the cold toppings—cucumbers, tomatoes, red onions, and feta—on the side. Drizzle with tzatziki.

This quick and healthy Pesto and Goat Cheese Pita Pizza recipe requires no chopping or prepping ingredients! By taking advantage of some store-bought items, you can have a nutritious and delicious meal on the table in 15 minutes.

Ingredients
• 1 whole wheat pita
• ¼ cup jarred roasted red peppers
• 1 jar of pesto (you’ll need about ¼ cup)
• 2.5 ounces goat cheese
• Arugula
• Balsamic drizzle

Directions:
1. Preheat your oven to 350°F.
2. Spread pesto evenly over the pita. Top with roasted red peppers and goat cheese (artichoke hearts, olives, banana pepper slices would all be great additions).
3. Bake for 10ish minutes or until the cheese has softened and the pita edges are crispy.
4. Remove pizza from oven and top with a generous handful of arugula then drizzle with the balsamic glaze.

What we love most about this Chickpea Beet Feta Salad is that it’s made from pantry ingredients we nearly always have on hand. There’s no need for special trips to the market or complicated steps. It’s a celebration of simplicity, and yet every bite feels rich with flavor and intention. These ingredients come together to form a salad that’s creamy, tangy, earthy, and bright all at once.

Ingredients
• 1 can (15 oz) chickpeas, drained and rinsed
• 2 medium cooked beets, peeled and diced
• ½ cup crumbled feta cheese
• ¼ cup olive oil
• 2 tbsp fresh lemon juice
• 1 clove garlic, minced
• Salt and freshly ground pepper, to taste
• Chopped fresh parsley, for garnish (optional)

Directions:
1. In a large bowl, combine chickpeas, roasted beets, feta cheese, and red onion.
2. In a separate small bowl, whisk together olive oil, lemon juice, fresh herbs, salt, and pepper.
3. Pour the dressing over the salad and toss gently to combine.
4. Serve immediately or refrigerate for later.
5. Store in an airtight container in the refrigerator for up to three days. For freshness, store the dressing separately if making in advance.
