This Edamame Crunch Salad with Sesame Cashew Lime Dressing is a vibrant dish that dances on your palate like a joyful summer festival. Imagine biting into crisp edamame and crunchy veggies, all while being enveloped in a zesty, nutty dressing that makes your taste buds sing, and your heart skip a beat.

Ingredients
• 1 cup shelled edamame (fresh or frozen)
• 1 cup bell peppers (mixed colors, diced)
• 1 cup cucumber (diced)
• 1/2 cup carrots (grated)
• 1/4 cup fresh cilantro (finely chopped)
• 1/4 cup cashews (lightly toasted)
• 2 tbsp fresh lime juice
• 1 tbsp sesame oil
• 1 tbsp low-sodium soy sauce
• 1 tsp maple syrup or honey

Directions:
1. If using frozen edamame, thaw and rinse them. Dice bell peppers, chop cucumber, grate carrots, and finely chop cilantro.
2. In a small bowl, whisk together lime juice, sesame oil, soy sauce, and maple syrup until blended. Adjust seasoning to taste.
3. In a large bowl, combine edamame, bell peppers, cucumber, carrots, cilantro, and cashews. Pour the dressing over the salad and gently toss until well coated.
4. For enhanced flavor, chill in the refrigerator for about 30 minutes before serving.
5. Serve chilled or at room temperature. Garnish with extra cilantro or sesame seeds if desired.

Thanksgiving leftovers are the gift that keeps on giving, and this Leftover Turkey Salad Recipe is one of our favorite ways to keep the magic going. It’s packed with leftover thanksgiving turkey, crunchy apples, and celery, plus the sweet-tart bite of dried cranberries. It’s simple to make, super versatile, and the perfect lunch for your post-holiday weekend!

Salad
• 3 cups chopped turkey already cooked
• 1 diced apple
• 1 cup celery diced
• 2 tbsp red onion diced
• 1/4 cup chopped pecans
• 1/3 cup dried cranberries
• 3 tablespoons mayo
• 2 tablespoons Greek yogurt
• 1 tsp Dijon mustard
• Salt +and pepper, to taste
• Fresh herbs (we love chives and/or dill in this recipe!)

Directions:
1. Add the turkey meat, fruit, veggies, and pecans to a large mixing bowl.
2. Add in the remaining ingredients. Toss gently to combine, ensuring the Greek yogurt and mayo coat everything evenly. Taste and adjust with extra salt and pepper, if needed.

This Fall Pasta Salad has all the flavors of fall— perfect for a gathering or easy lunch. Roasted Brussels sprouts, butternut squash, crisp apples, fresh thyme, and tender pasta—all topped with creamy goat cheese and a maple Dijon dressing.

Salad
• 8 oz rotini pasta, dry
• 2 cups brussels sprouts, diced
• 2 cups butternut squash, diced
• 2 cups apple, diced (Honeycrisp is our favorite)
• 1 tablespoon fresh thyme, chopped
• 2 tablespoon extra-virgin olive oil
• 1 teaspoon kosher salt
• ½ teaspoon black pepper
• 4 oz goat cheese, more for topping (or feta cheese)
• ¼ cup dried cranberries (optional)

Maple Dijon Vinaigrette Dressing
• 1/3 cup extra-virgin olive oil
• ¼ cup balsamic vinegar
• 1 tablespoon Dijon mustard
• 1 tablespoon maple syrup
• 1 clove garlic, minced
• ½ teaspoon kosher salt
• ¼ teaspoon black pepper

Directions:
1. Preheat the oven to 400°. Prepare a baking sheet with greased parchment paper for easy clean-up. Dice the butternut squash, brussels sprouts, and apple.
2. Add the butternut squash and brussels sprouts to the sheet pan and coat them in the olive oil, fresh thyme, salt and pepper. Bake in the oven for 20 minutes. Scoot the vegetables over and add the apples. Cook another 10-15 minutes or until everything is fork tender.
3. While the veggies roast, cook your pasta in a large pot according to the package instructions. When done, drain the pasta, saving about a tablespoon of the pasta water. Then toss it in a drizzle of olive oil and the extra pasta water and let it cool.
4. Combine the vinaigrette ingredients in a small bowl and whisk until well-emulsified, about 1 minute.
5. When the veggies are done roasting, let them cool. Assemble the salad by adding the cooled pasta, roasted veggies, goat cheese, and dried cranberries (optional) to a large bowl. Pour on the dressing and toss to combine, making sure everything is well coated.

Store any leftovers in the fridge for up to four days. Enjoy!
