A Day's Food I am a mom, public school educator and Cornell University certified plant-based nutritionist. Inflation has caused us to rethink our daily food regimen.

Given how busy our lives are, it can be difficult to find the time to shop, cook and eat healthy. The goal here is to offer nutrition coaching and recipes that focus on healthy immune function while adhering to a budget. A couple weeks ago, I was stung, repeatedly, by a wasp as I was walking into school. All I could think of was this beautiful crop of lemon balm in my garden and how I’d love to run home! Not many people are aware of the first-aid properties and benefits of lemon balm. Besides being deeply relaxing, it can soothe the stings and bites of Summertime. It can also be used to fight viral infections. If you’re interested in learning more about lemon balm and other herbal or If you’d like to discuss a nutrition or healing plan, pls reach out. I rely on almonds to get through my day, especially when I'm teaching. The trouble is- it's difficult to find a crop that has not been sprayed with glyphosate. I recently read that roughly 85% of almonds are sprayed with chemicals. The shocking truth is, even organic almond farmers use glyphosate on newly planted trees for up to three years. Spain is one of the only countries where this does not take place.

Happy Sunday!
Ghee, (the Hindi word for fat), is synonymous with Ayurveda. It is used as a base for many Indian medicines and herbal remedies. It’s ideal for conditions such as leaky gut syndrome, irritable bowel syndrome (IBS), Crohn’s disease and ulcerative colitis. This fatty acid also helps in reducing the risk of colon cancer.

My husband and daughter both struggle with lactose intolerance issues, so we use ghee regularly in my house.

Raise your hand if you've got some sick kiddos in need of a chicken soup remedy!

I'm insanely proud of this recipe. I developed it with a nod to a few tried and true, kid friendly chicken noodle soup recipes.
Everyone... meet chicken macaroni soup with ginger!
Just the thing for what's ailing most of us right now AND a kid-pleaser, to boot!

Recipe:
Preheat oven to 400 degrees
Season 6 organic chicken thighs with olive oil, salt, pepper and thyme and bake for about 30 minutes
(Important- you want thighs with SKIN ON for extra nutrients and flavor.)
When done, remove from oven and allow to cool until you can pick the meat apart into bite-size pieces.
Set aside and begin soup base.

Sauté 1 large organic onion for about 2 minutes or until translucent and then sprinkle in salt and pepper.
Add 3 organic carrots, 2 organic celery sticks, 2 garlic cloves and simmer on medium heat for about 5 minutes, or until you begin to smell a desirable flavor.
Add organic bone broth, chicken stock or water - about 8 cups. It can be a combo of all three, which is what I do.

Let this soup cook until a rolling boil on medium heat and then add the chicken and elbow macaroni. You'll need to cook until the pasta is ready. Lastly, add two "thumbs" of peeled or shredded ginger.

*A note about carrots - it's important to recognize the nutritional value of carrot skin. When you're cooking with carrots, don't peel them! Peeling carrots removes essential beta-carotene which is an antioxidant that protects against free-radical cell damage. This damage can cause many chronic illnesses. Just make sure you give them an extra scrub and there is absolutely no need to peel.*
