Raise your hand if you've got some sick kiddos in need of a chicken soup remedy!
I'm insanely proud of this recipe. I developed it with a nod to a few tried and true, kid friendly chicken noodle soup recipes.
Everyone... meet chicken macaroni soup with ginger!
Just the thing for what's ailing most of us right now AND a kid-pleaser, to boot!
Recipe:
Preheat oven to 400 degrees
Season 6 organic chicken thighs with olive oil, salt, pepper and thyme and bake for about 30 minutes
(Important- you want thighs with SKIN ON for extra nutrients and flavor.)
When done, remove from oven and allow to cool until you can pick the meat apart into bite-size pieces.
Set aside and begin soup base.
Sauté 1 large organic onion for about 2 minutes or until translucent and then sprinkle in salt and pepper.
Add 3 organic carrots, 2 organic celery sticks, 2 garlic cloves and simmer on medium heat for about 5 minutes, or until you begin to smell a desirable flavor.
Add organic bone broth, chicken stock or water - about 8 cups. It can be a combo of all three, which is what I do.
Let this soup cook until a rolling boil on medium heat and then add the chicken and elbow macaroni. You'll need to cook until the pasta is ready. Lastly, add two "thumbs" of peeled or shredded ginger.
*A note about carrots - it's important to recognize the nutritional value of carrot skin. When you're cooking with carrots, don't peel them! Peeling carrots removes essential beta-carotene which is an antioxidant that protects against free-radical cell damage. This damage can cause many chronic illnesses. Just make sure you give them an extra scrub and there is absolutely no need to peel.*
