My favorite trick to getting my kids (and ourselves) to eat more greens: dehydrate and sprinkle on everything! 1/2 a teaspoon equals a full serving- I know this seems impossible- but look at the pictures. I started with one bunch each: collard greens, dino kale, red kale, rainbow chard, turnip greens, and parsley all washed and stemmed. The finished product was one cup of sprinkles. We put it on eggs, sandwiches, mac and cheese, soup, even on salad! Kids love the green sprinkles.

Welcome to my new partner, Deborah Maahs, EAMP, MSOM. Deb and I went to school together in Santa Fe and she has just moved here. She will be available on Monday and Tuesday mornings, and all day Wednesdays and Saturdays. She will be taking over full time in January while I'm on maternity leave.
