"Why isn't the puzzle piece widely accepted by the Autism Community as a symbol?"
It's a great question because it does seem, at first glance, a fun way to represent something so misunderstood. The easiest explaination is that autism isn't a puzzle to be solved or a game to be played and won. There isn't a missing piece to any human. It is something that is a part of a whole person. So, implying there is a missing piece of a person's identity implies that the person is not whole or that they need to be solved to be validated.
Instead, we prefer the infinity symbol (usually colored as a rainbow) to show that neruodivergence is a spectrum that has no true beginning or end, but is complete and ever-evolving.
