Residents enjoying sweet potato coins made in cooking club:
Wash, peel, slice yams
Toss with olive oil & cinnamon sugar
Bake 375 degrees for about 25 minutes until fork tender. Pull out of the oven, place a marshmallow on each slice. Put under broiler (lowest oven shelf), watch closely to "toast" the marshmallows. When toasted, place a pecan on top of each. Serve immediately.
