Day 41 of 42- Finished!
The ride from coast to coast is complete! I had two of the best days of the trip- seeing the most beautiful ladies I know in Asheville and Greenville 💖
I ate at one of the countries best vegan restaurants and I didn’t even share the experience! I was busy eating one of the best appetizers and best desertsI have ever had- and tootired to post pics!
So that brings us to today...41 days of intense movement and here we are - at the ocean- complete.
Tomorrow I head home to see my sweet girl just in time for Halloween 🍁
In the past we ended in Charleston but this year it was Myrtle Beach.

Day 36 of 42 - 🌱🌱🌱🚴‍♂️
Vegan four bean salad with fresh herbs of basil, chives, and dill, fresh cherry tomatoes, chopped kale, green onion, green peas, black-eyes peas, garbanzo beans, kidney beans, , agave, black olives, pink sea salt, and topped with sunflower sprouts.
It was basically amazing ❤️🧡💛💚💙💜🖤
The leaves are changing, the sun is shining, and the days are long!
A lot of miles left these last days.

The count down is on and I'm starting to think of home! 🍁🍁🍁

Day 30 of 42- Vegan tahini rice salad with chickpeas, spinach, snap peas, bell peppers, onions, cumin, coriander, garlic, and - Made for 30 hungry cyclists in my hotel room

This is probably my personal favorite dish so far and it was loaded with healing oils and spices 🌱🌱🌱
Today's ride was from Van Buren to Sikeston. Another beautiful Missouri morning and many riders favorite route of the trip 🚴‍♂️

Day 29 of 42- Willow Springs to Van Buren 🚴‍♂️
Whereas my posts focus on my main job is bodyworker.
I've worked this trip since 2007- crossing the country for 6 weeks at a time- keeping elite cyclists on the road.
Post ride massage is in a different hotel room every night, furniture thrown up on the bed, and doesn't make for very interesting pictures. Plus I'm actually working and not in photo shoot mode!
But every night I do about 5 hours of massage and help these amazing souls accomplish a lifelong goal.
This experience is so transformative that for some this adventure of a lifetime is something they repeat 3-4 times!
For some this trip is medicine. A experience that does more then knocks off a bucket list item and instead teaches them something new about themselves ⚡️🚴‍♂️💙🇺🇸

Day 28 of 42- Vegan pasta for 30 hungry cyclists.
rice pasta in a sauce made from , grapeseed oil veganaise, nutritional yeast, and lemon and full of freshly chopped basil, sauteed summer squash, asparagus, sundried tomatoes, kalamata olives, and the most beautiful arugula I've ever eaten.
The squash was sauteed with nutritional yeast, and pink sea salt and the asparagus was balanced with olive oil and lemon.
Missouri is geourgous! These are just a few pictures from the last couple days.

Cows live for 18-20 years.
This baby boy will live for 18 weeks.
This is dairy. This is veal. This is the ”health-food” supplement market. This is casien. This is bone broth.
This was a baby animal that tried to jump and run and play while I talked to him- but he couldn't- he is kept in his pen so he can't use his God-given instincts. He worked to kick his back legs up and run but couldn't.
He isn't allowed to move around like the girl calf's in the other field. He needs to stay weak and immobile in order to taste right.
It was torture to have this sweet baby try to suckle my hand- like he should be doing to his mother- and just say a prayer for him and walk away.
He wants to live as much as a dog or cat- he is no different- but because of our attachment to milk coming from an animals ni**le this baby must be killed.
Animals milk creates disease in the human body and is not digestible without enzymes ( all of which are removed).
I've worked on cycling trips since 2007 and am on one now- witnessing the back roads factory farms and veal crates.
There is a huge problem in the world of cycling - the animal milk industry has paid for a study that told cyclists that chocolate milk was their ultimate recovery food.
I have begged in emails before.... Please turn your attention to cyclists. Cyclists believe this poison is helping them and they deserve real plant-based whole-foods nutrition.
I would love to see you take on the with information for cyclists and athletes in general.
My prayer for this baby is that he get a chance to live on earth again, only next time that he be allowed enough kindness from humans to run, jump, drink his mothers milk, and live his full 18-22 year life.

Day 25 of 42- - I want to thank your lovely instructor for an amazing class and an amazing food recommendation. was everything everyone said it would be. I loved my of adzuki bean patties, tofu scramble, arugula, cashew butter and fresh carrot juice.
A local book shop continued my wish list but with a couple sweet looking kids books.
And The Gathering Place park in Tulsa is the most thoughtful, intentional community space I have been to- we need more community spaces like this available to everyone ( only with free urban garden plots thrown in)
Overall I loved all the women I talked to today and the vegan food choices- so this has been a sweet little day of rest.

Day 23 of 42- It's not shocking...Plants are the ultimate 🌱🌱🌱 Vegan couscous with a dressing of , agave, parsley, and sea salt. The dish was full of artichokes, greens onions, cranberries, and almonds.
Enid OK to Stillwater OK with another picnic lunch in between.
A little van support, massage, and love-based food prep as we movefrom one coast to the other.
I'm loving our riders! This is an amazing group of souls all sharing the adventure of a lifetime🚴‍♂️⚡️

Day 22 of 42- Plant- based kindness in the fields of Oklahoma 🌱🌱🌱

Vegan Thai inspired sweet chilli rice salad for 30 hungry cyclists.

Clean protein from softly cooked broccoli, basmati rice, and garlic sauteed garbanzo beans.

Yesterday was Guymon to Woodward and today was Woodwatd to Enid Oklahoma.
Enid was the childhood home of one of my grandparents.

Day 19 of 42- Raton to Clayton. Vegan taco quinoa with black eyed peas, spinach, artichoke, olives, and red, yellow, and orange bell peppers sauteed in smoky paprika and garlic salt for 30 hungry cyclists. Made entirely in a rice cooker inside my hotel room.
We just had two gorgeous New Mexico mornings. We left Taos and headed to Raton yesterday. Outside of Taos there are incredible properties in the Carson National Forest area- log cabins on wild land with streams and little cliffs- a dream.
All of these pictures I'm posting are of this morning leaving Raton.
