Try this super easy recipe from the American Diabetes Association food hub this weekend. Great way to get your veggies in!
(Remember, 1/4 of your plate should be your protein, 1/4 of your plate should be your starch, and 1/2 of your plate should be your vegetables.) Cauliflower is a low-calorie, nutrient rich veggie. It is an excellent source of vitamins C & K, and a good source of folate and potassium. It also provides antioxidants which help reduce inflammation......Enjoy!
