Meet our Chef of the Month, Dr. Glenn Aricaya, our Rehab director. Glenn holds a doctoral degree in Physical Therapy and is passionate not only about helping residents through therapy, but also about the art of cooking.

Glenn grew up in the Philippines, where his family owned a small eatery in a local market. Even as a grade school student, he helped run the business - an experience that ignited his lifelong love for cooking.

His inspiration comes from the people around him who appreciate what he does. Whether through his culinary creations, his therapy work, or simple gestures that brighten someone's day, their gratitude motivates him to give even more - wholeheartedly and unconditionally.

Outside of work, Glenn enjoys exploring restaurants, trying different menus, and recreating them in his own kitchen. His hobbies also include world travel, snowboarding, attending live shows and comedy bars, and cooking or catering intimate fine-dining experiences for small groups.

Looking ahead, Glenn envisions himself continuing his career in physical therapy, while also opening a catering business or a small restaurant bar. Despite his busy schedule, he keeps a healthy work-life balance by enjoying fun weekends, and unwinding at home every night cooking his favorite dishes and watching movies.

Meet Rei Dizon, our Employee of the Month.

Rei was born and raised in Nueva Ecija, Philippines. He is the youngest of five siblings. From a young age, he has always had a passion for the culinary arts. He went on to earn his degree in culinary studies and has continued to follow his heart, excelling in what he does best - cooking.

He married young to his wife, who is a nurse, and together they have three children. In search of better opportunities, his wife worked as a nurse in Qatar while Rei pursued his passion as a Chef on a cruise ship - doing what he loves most while traveling the world. In 2006, he joined his wife in Qatar and went on to establish his own restaurant "Pinoy Resto and Grill".

At the height of COVID-19 pandemic, the family decided to migrate to U.S. and settled in San Diego, CA in 2021. It was there that Rei discovered his joy in serving the elderly. He first worked as a line Cook in a retirement home and later became a senior cook at a San Diego hospital.

When the family eventually moved to the Evergreen State, Rei and his daughter were applying for jobs during rest stops along the way. It seemed everything was meant to be - on the very same day he submitted his application to The Oaks, a kitchen position had just opened. Tiffany, our Dietary Manager, called him right away, conducted a phone interview, and just like that, Rei reported for work the very next day.

When asked during this interview why he wants to work in a skilled nursing facility, Rei shares that he finds inspiration and fulfillment in serving the elderly - much like the tradition and culture he grew up with in the Philippines. The residents motivate him to become a better version of himself each day. And the residents' verdict? Whenever Rei is on duty, it feels like Gourmet meal is being served.

The Oaks at Lakewood Goes Beyond Our Walls!

In celebration of National Physical Therapy Awareness Month, The Oaks at Lakewood proudly launched its first-ever Community Outreach Program, spearheaded by our passionate Therapy and Activities Departments!

Our team conducted a Fall Prevention Symposium for over 40 seniors from the Pierce County Seniors Association, held at the Asia Pacific Cultural Center. The event was filled with learning, movement, and inspiration—many attendees even inquired about our outpatient therapy services and sought on-the-spot consultations from our Guest PT!

As an Ensign-affiliated facility, we live out our CAPLICO value of “Passion for Learning.” What we learn in our profession, we share with our community—because empowering others to stay safe, strong, and steady is truly our “Why.”

A Historic Milestone at The Oaks at Lakewood!

Since our acquisition in June 2021, this week marks a truly once-in-a-lifetime celebration — the first ever 100th Birthday of one of our beloved residents, Mrs. Pech! The dining room was filled with laughter, music, and heartfelt stories as our staff and residents came together to honor a century of wisdom, resilience, and grace. Though Mrs. Pech’s family joined virtually from out of state and overseas, their love transcended the screen — making the moment even more special.
We were honored to receive a Certificate of Congratulations fron the Office of Congresswoman Marilyn Strickland along with birthday wishes from The Office of the City Mayor of Lakewood ,adding to the warmth of this historic day. From her early life in Cambodia to her life in the United States and now joining us as a resident at The Oaks at Lakewood this year-- Mrs. Pech’s journey reminds us why we do what we do — to capture and celebrate every milestone in our residents’ lives.

Casino Day at The Oaks at Lakewood!

Luck was in the air as we transformed our dining room into a lively Vegas- style casino—complete with slot machines, roulette, and card tables! Residents gathered to try their luck, laugh, and celebrate together. One resident shared, “I’ve never been to a nursing home that brings so much fun—I don’t even feel like I’m in one!”
Moments like these remind us why we do what we do—creating joy, connection, and a true sense of home for our residents.

One of the most looked-forward-to activities by our residents is the Activities Department’s “Chef of the Month” program!
For October, our very own Administrator, Mindy, took center stage—elegantly preparing a delightful Fruit Trifle that wowed everyone in attendance. It felt just like watching an episode of “Chopped,” with our residents and staff stepping in as the judges! The verdict? The residents loved it so much—they asked for seconds!
