Look for:

1. "Extra virgin" True extra virgin means the oil is made from the first cold pressing of olives with no chemical treatment and low acidity.

2. Check the harvest date- Olive oil degrades over time. Choose a bottle with a recent harvest date and use within 12–18 months for optimal flavor and nutrients.

3. Choose dark glass bottles - Light and heat can degrade EVOO. Dark bottles or tins protect the oil from oxidation.
