🍂 Fall is here, and so is cozy comfort food! Try this Roasted Butternut Squash + Apple Soup recipe (it’s nutritious and delicious):

Recipe (serves ~4):
• 1 medium butternut squash, peeled & cubed
• 2 apples (firm variety), peeled & chopped
• 1 small onion, diced
• 2 cloves garlic, minced
• 3 cups low-sodium vegetable or chicken broth
• ½ tsp cinnamon
• Salt & pepper to taste
• Olive oil

Instructions:

Toss squash, apples, onion & garlic with a drizzle of olive oil, salt & pepper. Roast at 400°F for ~25 min until tender.

Transfer to a pot, add broth + cinnamon, bring to gentle simmer.

Use an immersion blender (or regular blender in batches) to purée until smooth.

Adjust seasoning, serve warm, and top with a swirl of Greek yogurt or pumpkin seeds if you like!
