Have you ever made garlic honey? 🍯 🧄
Let’s make this simple Kitchen Herbalist recipe together.
Ingredients
•1 Bulb - Fresh Garlic
•4-6 fl oz - Raw, Local Honey
•8 fl oz Empty, Sanitized Mason Jar and Lid
Instructions
1. Start by peeling and separating all of the cloves in the garlic bulb. Discard the papery peel, and roughly chop the fleshy cloves.
2.Next, add the chopped garlic to a small sterilized canning jar until it is about half way full.
3. Pour your choice of raw, local honey over the chopped garlic in the jar until it is just covered or has room to begin floating just a little. Leave at least 1-2 inches of air space in the jar. (You can use a sterilized steel spoon to help integrate the honey with the garlic at this time.)
4. Cap the jar and leave it in a place out of direct sunlight. Burp it at least once a day for the first month as it ferments.
This preparation can be consumed immediately, but it can get stronger as it infuses and ferments. For maximum potency we suggest lightly turning and burping the jar daily for a month, and consuming the preparation entirely within 3 months. It’s great for many culinary uses or just as a daily nutritious, immune boosting snack.
Note: Both Honey and Garlic can harbor Clostridium botulinum, or Botulism Bacteria. The pH of the honey can naturally discourage its proliferation, but the added moisture from the garlic can decrease the acidity of the honey and produce an environment for growth. It is important to use a little more honey and leave air space in the jar as the oxygen can also help to deter bacterial growth in this instance. A splash of Apple Cider Vinegar can also be added to maintain a pH below 4.6 and produces an easy immune boosting oxymel. If the mixture begins to smell off, grow mold, or produce other discolored spots (pink, green, black), do not ingest and discard.
