π₯£π² It's sweater weather which means it is also soup season! π²π₯£

After making some chicken bone broth to use as a base for some of my soups, my first soup of the season was my Crockpot Onion Soup. We had an overabundance of red onions that needed to be used. This seemed like the perfect time to use them for soup - this was also my first time using all red onions for the soup, but it was delicious! π§
π₯π§ I am intolerant to cow dairy, but I can tolerate goat dairy, so I added some goat cheese crumbles on top (scroll to the end). It was melty, creamy, and perfect! We were running low on bread, so I broke up some seed crackers and sprinkled them on top. It might not look like traditional French onion soup, but it tasted absolutely amazing and I had tons of leftovers to enjoy throughout the week. π§π₯
My approx recipe:
INGREDIENTS
- 12-15 onions of any variety, sliced
- 6-8 cups of broth of your choice (I used chicken bone broth this time, but have used beef bone broth in the past), enough liquid to nearly cover the onions.
- 2 Bay leaves
- Salt & pepper, to taste
- Thyme (fresh or dried), to taste (optional)
- Cheese (pref something that melts well), optional topping
- Croutons or a crusty slice of bread, optional topping
Add all ingredients (except the cheese & bread/croutons) to your crockpot/slow cooker and cook on low for 8 hrs. Once the soup is cooked, serve and enjoy! Add cheese and bread/croutons to soup as a topping, allowing the heat of the soup to melt the cheese a bit.
