LENTEN SWEET POTATO MAC + “CHEESE” 🧡🥣✨
One thing I love about Orthodox Christian fasting is how it re-trains the soul through the body.
We simplify. We abstain. We quiet the cravings.
And then when we break the fast, we don’t do it with chaos — we do it with simplicity, gratitude, and nourishment.
Because the goal isn’t just “eating vegan.” The goal is healing the whole person. Body, mind, and spirit — integrated, not fragmented.
Lenten meals can be simple, humble, and plant-based—but should also be kind to the body God gave us.
Not harsh. Not inflammatory. Not neglectful.
✨ Fasting is not self-hate. It’s holy re-ordering.
And this sweet potato mac is one of my favorite ways to do that 🧡

Sweet Potato Mac & “Cheese” (Vegan + Lent-Friendly)
Serves 4 | ~35 minutes
🛒 Ingredients
2 cups brown rice macaroni (dry)
2 small sweet potatoes, peeled + cubed
1 tbsp extra virgin olive oil
1/2 yellow onion, chopped
3 garlic cloves
1/4 tsp turmeric + black pepper
1/4 cup vegetable broth (divided)
1/4 cup unsweetened almond milk
1 tbsp tamari (or soy sauce)
1/3 cup nutritional yeast
1/2 tsp sea salt + black pepper (to taste)
1/2 tsp garlic powder (optional)
1/2 tsp onion powder (optional)
1 tsp smoked paprika ✨
1 cup soaked cashews (optional) ✨ for extra creamy texture
🍲 Directions
Cook pasta. Drain + rinse with cold water.
Sauté onion, garlic, and sweet potato ~5 min.
Add water to cover potatoes. Simmer 8–10 min until tender. Drain.
Blend sweet potato + onion + garlic with broth, milk, nutritional yeast, tamari, turmeric, salt/pepper, smoked paprika, and cashews (optional) until silky.
Mix sauce into pasta. Taste. Adjust. Enjoy.
