☀️ First-morning sunlight nourishes your adrenal glands (cortisol producer) in a way nothing else can.

✅ Sync your circadian rhythm (sleep/wake cycle) with the light. Morning sunlight gently raises cortisol.
✅ Light (outdoor) exposure for 10-15 minutes, within 30 minutes of waking: no sunglasses, no windshields, no windows, no phone first. This also helps shut down your melatonin receptors (which tell us to sleep).

Are you listening to your heart? 💓 The link between cardiovascular disease and blood sugar imbalance.....

When your blood sugar goes on a rollercoaster 🎢

In the short term, you feel: brain fog, irritability, headache, mood swings, fatigue, shakiness

💓 Cardiovascular damage can add up as time passes: the inner lining of the blood vessels get damaged, become inflamed and atherosclerosis can start to develop, hardening and narrowing the arteries.
💓 Red blood cells become stiff and rigid, causing trauma to the arteries, so the body lays down a protective layer of cholesterol (which can become calcified).
💓 Risk of heart disease, heart attack and stroke are heightened

The pancreas keeps cranking out insulin every time the blood sugar spikes. Eventually, the cells stop responding to insulin and insulin resistance/type II diabetes is imminent.

Kidney filtration is impaired; small blood vessels are damaged

👁 Eyes start to develop retinopathy; vision problems

Nervous system is impacted - numbness, tingling, neuropathy

Ways to tame your blood sugar:

Yummy dinner for a Monday night!

Sun-Dried Tomato/Spinach Chicken

Ingredients:

2 large chicken breasts
1/2 tsp. Italian seasoning
1/2 tsp. onion powder 🧅
1/2 tsp. garlic powder 🧄
10 oz. fresh spinach, chopped 🥬
2 garlic cloves, minced
1/2 cup goat cheese
1/4 cup shredded cheddar/colby cheese
1/4 chicken broth
Sun-dried tomatoes, drained of oil, chopped into smaller bites 🍅 (pic in comments)
1 tbsp. olive oil

Instructions:

Preheat oven to 375 degrees. Season chicken breasts with garlic powder, onion powder and italian seasoning. Bake 15-20 minutes (we used glass baking dish).

While baking, chop spinach and garlic cloves. Cook spinach and garlic, 1-2 minutes, in olive oil, then add goat cheese, shredded cheese and chicken broth until the creamed spinach is thick in texture, not watery.

Top chicken breasts with creamy spinach and sun-dried tomatoes and bake in the oven for 5 more minutes.

Spending more time in the kitchen this afternoon….this time, it’s the Lemon Pistachio Loaf 🍋

This is my first time using spelt flour…..packed with fiber!

Ingredients:

1 medium zucchini, peeled
1 cup whole, unsalted pistachios
3/4 cup spelt flour
2 tsp arrowroot powder
Pinch of Celtic sea salt
3 medium eggs 🥚
1/4 cup extra-virgin olive oil
1/4 cup Greek yogurt (we used Green Valley lactose-free)
7 tbsp light brown sugar
Zest of 1 1/2 lemons and juice of 1

Directions:

Preheat the oven to 350 degrees and line a loaf pan with parchment paper.

Grate the zucchini and place into the center of a clean kitchen towel. Wrap the grated zucchini tightly and wring out as much water as possible (we used paper towels).

Put 3/4 of the pistachios into a food processor and process until as fine as possible. Transfer to a bowl with the flour, arrowroot powder and salt.

In a separate bowl, place the eggs, olive oil, yogurt, brown sugar and lemon zest and juice and mix until smooth. Add the dry ingredients and the zucchini and fold everything together until thoroughly mixed.

Spoon into the prepared loaf pan. Coarsely chop the remaining pistachios and scatter on top. Bake for 50-55 minutes or until a knife inserted in the middle comes out clean. Allow to cool completely before removing from the pan and slicing.
