Pump up breakfast with Pumpkin Pancakes! Enjoy the healthy alternative to a breakfast favorite, with a Fall twist!

Ingredients:
1 cup rolled oats
½ cup up pumpkin puree
2 eggs
½ tsp of cinnamon
¼ tsp of nutmeg
½ tsp of baking powder
Splash of milk (dairy or non-dairy)

Blend all ingredients and cook in a non-stick skillet, pan or griddle. Greek yogurt and fruit can be served with this Fall, festive treat.
