Ginger turmeric lentil soup. Why do i often start soups by sweating onions and garlic? They both have inulin — a soluble, prebiotic fiber the improves gut health by feeding the good bacteria. Inulin increases feelings of fullness, the fiber relieves constipation and helps the body absorb calcium and magnesium. This soup is so simple to make—- sweat 3 yellow onions, a couple nubs of ginger and a few cloves of garlic in a little oil or vegetable broth. When the vegetables become soft— whir them in your blender or food processor. Pour back into soup pot. Add 1 tsp cumin and. 1/2 tsp turmeric. Add 2 cups lentils and 6 cups broth. Cook until tender about 18 minutes. I like to spin 2 cups of the lentils in the blender before pouring it back in the soup. Season with salt and pepper. Maybe top with a dollop of yogurt.
