I made a new high fiber protein bar. Turned out yummy!
Whole orange cake
350 for 45m
2 medium oranges, fresh whole. Boil for 40min (watch water level) drained & cooled
1 scoop/ pro powder(30g)
1 +1/4 tsp baking powder
3/4 cups white sugar or equivalent sweetener
2 3/4 cups almond meal / ground
1C milled flax
1/3 c almond flour
1/3 c oil
3 eggs
Mix dry ingredients.
Blend the cooled oranges until smooth. Add eggs and oil. Blend lightly. Stir into dry ingredients, then transfer to greased 9x9 pan. Bake at 350 for about 45 min.
Flax is a heavy ingredient and will have a very moist crumb. You could adjust by subbing more almond flour, but I'm most interested in the fiber the flax brings.
