Vegetable Tamales

Makes 12 tamales.
Prep time: 1 hour
Cook time: 1 hour

Nutrition information per tamale: Calories 180, Carbohydrate 30 g, Dietary Fiber 5 g, Protein 5 g, Total Fat 4 g, Saturated Fat 1 g, Trans Fat 0 g, Cholesterol 0 mg, Sodium 250 mg

Ingredients
2 cups masa harina
1/2 cup vegetable oil
1 cup vegetable broth
1 cup finely chopped mixed vegetables (carrots, bell peppers, corn)
1/2 teaspoon cumin
1/2 teaspoon chili powder
Corn husks, soaked

Preparation
1. Mix masa harina, vegetable oil, and broth until smooth.
2. Stir in vegetables, cumin, and chili powder.
3. Spread masa mixture on corn husks, fold, and steam for 1 hour.

Stuffed Acorn Squash

Makes 4 servings.

Cook time: 45 minutes

Ingredients
2 acorn squash, halved and seeded
1 cup cooked quinoa
1/2 cup dried cranberries
1/2 cup chopped walnuts
1 teaspoon cinnamon
