Keto Fish Curry
THE PREPARATION
Fish Curry:

13 1/2 ounce can coconut milk
1 tablespoon curry powder
2 teaspoon fish sauce
1/4 cup red wine vinegar
1/2 medium red onion
2 teaspoon chili-garlic paste
16 ounce tilapia
1 tablespoon olive oil
Cauliflower Rice:

400 gram cauliflower, riced
2 tablespoon avocado oil
2 tablespoon soy sauce
2 tablespoon fresh cilantro, for garnish
THE EX*****ON
1. Measure out and prepare all of the ingredients.
2. Slice the onion and place in a bowl with red wine vinegar. Let this sit for 15 minutes.
3. In a frying pan over medium heat, combine the canned coconut milk, curry powder, and fish sauce. Let this simmer for about 10 minutes stirring occasionally.
4. Season the tilapia with the chili-garlic paste. Cook the tilapia in a pan with avocado oil over medium heat. Let cook on both sides for 2-4 minutes per side or until the internal temperatures reaches 145F.
5. In a frying pan, cook the cauliflower rice by combining avocado oil, cauliflower rice, and soy sauce. Place over medium heat and let cook for about 8 minutes.
6. Serve the fish over the cauliflower rice. Garnish with the sauce, onions, and cilantro. Serve and enjoy!

Keto Creamy Tuscan Salmon
THE PREPARATION
24 ounce salmon
1 tablespoon olive oil
2 tablespoon butter
5 teaspoon fresh garlic, diced
1/2 medium yellow onion
1/3 cup vegetable broth
3 tablespoon sun-dried tomatoes
1 cup heavy cream
6 ounce baby spinach
1/4 cup parmesan cheese
1 tablespoon fresh parsley, chopped
Salt and pepper to taste
THE EX*****ON
1. Measure out and prepare all of the ingredients.
2. Heat the olive oil over medium to high heat in a frying pan. Sear the salmon on both sides for about 5 minutes or until they are cooked thoroughly. Once cooked, remove salmon from the pan and set aside.
3. Melt the butter using the same pan. Add the diced garlic and stir together.
4. Add in the onion and cook until it’s translucent.
5. Add in the sun-dried tomatoes and stir to combine well.
6. Now, add in the vegetable broth and let everything cook for a few minutes until everything simmers down.
7. Add in the heavy cream and stir to combine well. Cook for a few minutes until the mixture starts to get thicker.
8. Add the spinach into the frying pan and cook until it is wilty, then add the parmesan cheese. Combine well and let this cook for 1 – 2 minutes.
9. While the frying pan is still on the heat, add in the salmon to let the salmon get hot again.
10. Top with parsley.
11. Serve and enjoy!

Roasted Garlic Chipotle Aioli
THE PREPARATION
1 tablespoon roasted garlic
½ cup olive oil
¼ cup sour cream
2 large egg yolks
2 teaspoons lemon juice
1 teaspoon dijon mustard
¼ teaspoon Chipotle Powder
Salt and pepper to taste
THE EX*****ON
1. Start by bringing your eggs to room temperature. You can do this by putting both eggs into warm water for about 1-2 minutes. Once done, remove and dry off.
2. In a food processor, add 2 egg yolks, 1 tbsp. Roasted Garlic, 2 tsp. Lemon Juice, 1 tsp. Dijon Mustard, and some salt and pepper.
3. Mix this together until it’s creamy.
4. Turn your food processor on and slowly drizzle the oil into the egg yolk mixture. Take your time while doing this so that the oil can emulsify into the egg yolk. This is similar to how you make mayonnaise.
5. Once it’s all together, add 1/4 cup Sour Cream and 1/4 tsp. Chipotle Powder. Use your food processor to mix this together very well into the aioli.
6. Serve up with your favorite crackers or layered on top of your favorite food!

2 teaspoon fresh garlic, finely chopped
3 ounce green onion, thinly sliced
2 1/2 ounce fresh basil, chopped
1/2 cup sour cream, for serving
THE EX*****ON
1. Measure out and prepare all the ingredients.
2. Using a knife or a mandolin, shred the cabbage finely.
3. Over low to medium heat, heat the cabbage with half of the butter. Let this cook for about 10 minutes or until the cabbage turns soft.
4. Add the red wine vinegar, salt, onion powder, and pepper. Stir together well and let everything combine. Take the cabbage out of the pot and set aside.
5. In the same pan, add the rest of the butter, fresh garlic, and green onions. Stir to combine well.
6. Add the ground beef to the pan and cook until the beef browns.
7. Add tomato paste and stir well. Add the cooked cabbage back to the pan along with basil.

Cajun Seasoning

2 teaspoons garlic powder
2 teaspoons salt
2 teaspoons smoked paprika
1 teaspoon chipotle seasoning
½ teaspoon dried oregano
½ teaspoon onion powder
Cauliflower Steaks

¾ medium cauliflower
3 tablespoons olive oil
¼ cup grated Parmesan cheese
½ medium lime
2 tablespoons chopped fresh cilantro

1. Pre-heat oven to 400 degrees Fahrenheit. Combine all the seasoning ingredients in a small bowl and mix evenly.
2. Slice one whole head of cauliflower, starting from the center, into 1-inch “steaks”. The ends typically crumble so you can save those pieces for other recipes or toss them on the baking sheet too!

16 ounce flank steak, cut into strips against grain
1 tablespoon soy sauce
2 teaspoon sesame oil
1/4 cup low-carb protein powder
Sauce:

4 tablespoon avocado oil
1 tablespoon fresh ginger, grated
4 teaspoon fresh garlic, minced
1/4 cup soy sauce
4 medium green onion
2 teaspoon sesame seeds, for garnish
Cauliflower Rice:

360 gram cauliflower, riced
2 tablespoon avocado oil
1 teaspoon sesame oil
Salt and pepper to taste
2. In a bowl, add the steak with soy sauce and sesame oil. Stir to combine well. Let this marinade in the refrigerator for 30 minutes.
3. In a separate bowl, make the sauce by combining the grated ginger, minced garlic, soy sauce, and green onions.
4. In a skillet, heat the avocado oil over medium to high heat.
5. On a plate, coat the steak strips in protein powder.
6. Add the coated steak strips to the pan with the hot oil. Fry for 2 – 3 minutes on each side or until done. Once thoroughly cooked, remove the steak strips from the pan and set over paper towels to let extra oil drain off.
