Keto chicken pesto zoodle salad(check comment for ingredients)
Instructions
Place the chicken thighs in a medium pot and add cold water until the chicken is just covered.
Bring to a boil. Then reduce the heat to medium-low and simmer for 15 minutes or until the chicken is thoroughly cooked.
Remove the chicken from the water and shred it using two forks. Set aside.
While the chicken is cooking, spiralize the zucchini and place the zoodles in a large mixing bowl.
Pour the pesto over the zoodles, and toss with tongs to completely coat the zoodles.
Add shredded chicken, tomatoes, and feta to the zoodles and gently toss with tongs until evenly combined. Drizzle with olive oil.

Preheat the oven to 400°F (200°C).
Start by making the crust. Crack eggs into a medium-sized bowl and add shredded cheese. Give it a good stir to combine.
Use a spatula to spread the cheese and egg batter on a baking sheet lined with parchment paper. You can form two round circles or just make one large rectangular pizza. Bake in the oven for 15 minutes until the pizza crust turns golden. Remove and let cool for a minute or two.
Increase the oven temperature to 450°F (225°C).
Spread tomato sauce on the crust and sprinkle oregano on top. Top with cheese and place the pepperoni and olives on top.
Bake for another 5-10 minutes or until the pizza has turned a golden brown color.
Serve with a fresh salad on the side.

Sprinkle the chili powder, cumin, and salt over both sides of the fish fillets.
Heat the oil in a skillet over high heat.
When the oil is hot, add the fish and sear for 1.5 minutes on each side. Reduce heat to low and pour the prepared salsa around the filets.
Simmer the fish in the salsa for 3-4 minutes. Plate the fish, and pour the salsa evenly over the fish.
Serve with sour cream, avocado, and crumbled queso fresco. Garnish with a wedge of lime and chopped fresh cilantro if desired.

Preheat the grill for 20 minutes on medium heat with the lid down. If you don't have a grill, you can also prepare these delicious burgers on the stovetop. Just fry the burgers in some butter in a frying pan for a few minutes on each side.
In a bowl, combine the ground beef, salt, and pepper.
Finely chop the onion and cut the jalapeño into small pieces. Remove the seeds first if you don’t want it to be too spicy. Add onion and jalapeño to the meat and combine thoroughly with your hands.
Form one hamburger patties per portion. First, shape them into a ball and then slowly press down. If you make them on the grill, leave them a bit thicker because they cook fast.
Grill the patties for 5-7 minutes on each side, depending on how well done you want them. Allow them to rest for 10 minutes before serving so the juices can settle.
While the burgers are on the grill, thinly slice the tomato. Cut the avocado lengthwise, remove the pit and spoon out the flesh.
To assemble, take 3-4 lettuce leaves for each burger. Place burger in the middle, top each with slices of cheese and a slice of butter. Add the tomato and avocado, season with salt and pepper. Try to wrap the burger so you can easily grab it.

Keto chicken salad with a creamy chimichurri dressing(check comments for Ingredients)
Add all the ingredients for the chimichurri dressing to a food processor or a blender. Mix until smooth. Add some water if you prefer a runnier consistency. Set aside.
Heat a large skillet with olive oil. Season the chicken thighs with salt and pepper. Add them to the hot pan and fry on both sides until completely cooked. It will take about 10-15 minutes depending on the thickness of the meat.
While the chicken is frying, prepare the vegetables and arrange them on individual plates or a big serving platter. Place the chicken on top and serve with the dressing, a couple of lemon wedges, and chili if you like to add a bit more heat to the dish.

Halve each avocado, remove stone, peel away skin and cut each into 6-8 wedges.

Working with 1 piece at a time, coat a piece of avocado in the egg mixture, allowing excess to drip off, then coat in the almond meal mixture. Repeat with the zucchini and fish. Spread the crumbed avocado and zucchini evenly over prepared tray. Place the crumbed fish on a plate, cover and place in the fridge for 10 minutes to rest.
Step 5
Spray the crumbed avocado and zucchini generously with oil. Bake for 20 minutes or until golden and crisp.

Preheat oven to 180C/160C fan forced. Line a baking tray with baking paper.

Reserve 2 medium strawberries. Cut the remaining strawberries into quarters (or sixths if large) and place on the prepared tray. Bake for 10 minutes or until starting to soften. Use a fork to flatten each piece slightly. Bake, stirring halfway, for a further 20 minutes or until very soft. Bake for a final 10 minutes. Transfer to a plate and set aside to cool completely.
Step 3
Use electric beaters to beat the cream cheese, strawberry pulp and xylitol in a large bowl until combined. Add the coconut and stir to combine. Cover and place in the fridge for 1 hour or until firm.
Step 4
Line a baking tray with baking paper. Cut the reserved strawberries in half lengthways then cut each half into quarters. Take a level tablespoonful of the chilled cheesecake mixture and press a piece of fresh strawberry into the centre. Roll into a ball and place on the prepared tray. Repeat with remaining mixture and strawberry pieces.
Step 5

Preheat oven to 200°C/180°C fan forced. Line a baking tray with baking paper. Place cauliflower on prepared tray. Drizzle with 1 ½ tablespoons oil and sprinkle with the stock powder. Bake for 25 minutes or until golden and tender.
Step 2
Meanwhile, place stock and mustard in a small saucepan and bring to the boil over high heat. Reduce heat and simmer for 2 minutes. Add cream and simmer for a further 2-3 minutes or until sauce is reduced by half. Stir through chives and lemon juice, keep warm.
Step 3
Heat remaining oil in large non-stick frying pan over medium-high heat. Cook chicken and bacon for 3-4 minutes each side or until golden and crisp. Cut bacon into 3cm pieces.
Step 4
Arrange salad leaves, chicken, cauliflower and bacon on a serving platter. Drizzle with the cream sauce and sprinkle with macadamia nuts and remaining chives.

Step 1
Combine the beef, egg, shallot, parsley, garlic, allspice and nutmeg in a large bowl. Season well. Roll tablespoonfuls of the mixture into balls.
Step 2
Heat the oil in a large non-stick frying pan over medium-high heat. Cook the meatballs, turning often, for 6-8 minutes or until golden and just cooked through. Transfer to a plate.
Step 3
Add the stock, mustard and 125ml (1/2 cup) cream to the pan and bring to the boil. Reduce heat and simmer for 5 minutes or until reduced by half. Return the meatballs to the pan and simmer for 1-2 minutes or until heated through.
Step 4
Place the cauliflower and remaining cream in a food processor and process until smooth. Season.
Step 5
Divide the cauliflower mash among serving plates. Top with the beans, meatballs and sauce. Season. Serve scattered with parsley.
