This program completely changed my life. I was at the heaviest weight I’d ever been (200lbs) and absolutely miserable. I had horrible sleeping problems, very low self esteem, chronic back pain, it hurt to squat, I couldn’t get off the floor…and so on. I was missing out on so many things in life because I was physically not willing to participate.
I hit rock bottom and finally said YES to taking control of my health. You guys…this program works!! I’m a completely different person…a version of myself I’m SO incredibly proud of.

Lasagna Stuffed Chicken

Ingredients:
1 lb chicken breasts (2 Leans)
1 cup part skim ricotta cheese (1 Lean)
1/4 cup egg beaters (1.33 Condiments)
1 teaspoons oregano (1 Condiment)
2 teaspoon basil (1 Condiment)
1/4 tsp garlic powder (1/2 Condiment)
1/2 teaspoon salt (2 Condiments)
1/4 teaspoon black pepper (1/2 Condiment)
2 tablespoons reduced fat Parmesan cheese, grated (1 Condiment)
1 cup reduced fat shredded mozzarella, divided (1 Lean)
1 cup program approved marinara sauce (4 Greens)

Directions:
Butterfly chicken breasts and place into a lightly greased baking dish.
In a small mixing bowl, stir together ricotta cheese, egg beaters, 1/2 tsp oregano, 1 tsp basil, garlic powder, salt, black pepper and 1/2 cup mozzarella cheese.
Spoon about ¼ cup of sauce onto one half of each chicken breast. Spread ricotta mixture on top of the sauce and fold chicken breasts over to close.
Drizzle remaining marinara sauce over chicken. Top with 1/2 cup mozzarella cheese and parmesan cheese. Sprinkle with remaining 1/2 tsp oregano and 1 tsp basil.
Bake in a 400 degree oven for 25-30 minutes, until chicken reaches an internal temperature of 165 degrees F.

Notes: This recipe can easily be doubled or tripled.
4 Servings: 1 Lean, 1 Green, and 2 Condiments per Serving

Chicken Zucchini Poppers

Ingredients:
1 lbs. ground chicken breast
2 cups grated zucchini (leave peel on)
1/2 cup green onions, sliced
1/2 cupTbsp cilantro, minced
1 clove garlic, minced
¾ tsp salt
½ tsp pepper

Instructions:
1. Mix ground chicken and remaining ingredients in large mixing bowl. Grease frying pan or skillet with olive oil.
2. Spoon out nugget-sized pieces onto the oiled skillet (I like to use a small ice-cream scoop). Cook over medium heat for 5 minutes on each side.
3. Serve!

2 servings with each:
1 leaner
3 green
3 condiments

Restaurant Tip:
Salads are always a good go-to at a restaurant.

Okay so yes — we definitely want to avoid piling on a bunch of high-fat, high-calorie toppings, but overall, salad is such a solid choice. Usually it’s not drenched in oil, and all those greens give you tons of volume to help fill you up without a ton of calories. Just have to watch out for those sneaky, calorie-loaded extras, especially dressings (get them on the side). 😬

Now, the only downside is that some places don’t give you enough protein. So I ask for a side of extra chicken or shrimp to boost the protein — we have to make sure we actually get full and don’t end up hungry again five minutes later!
