Here is a super easy way to start your day!! I made these this morning with uncured bacon prep time was less than 20 minutes once the bacon was cooked.
Perfect for busy mornings, meal prep, or a healthy grab-and-go snack. If you want a breakfast that’s fast, nourishing, and family-approved, these egg bites are it. They’re creamy, fluffy, packed with protein, and totally customizable!
A perfect way to start the day out right protein and fats, get your blood sugar off to a healthy start especially during the holiday season.
Super Easy High-Protein Egg Bites!
Ingredients
7 eggs
1 cup cottage cheese (makes them extra fluffy + high protein! I love Good Cluture brand if you can find it)
1 cup shredded cheese of choice (cheddar, mozzarella, pepper jack, parmesan etc.)
Optional add-ins: bacon, sausage, spinach, peppers, onions, mushrooms, broccoli, etc.
🥄 Directions
Preheat oven to 350°F.
Blend eggs + cottage cheese + shredded cheese until smooth (a blender or immersion blender works great). I used a Nutri Bullet.
Stir in any desired add-ins.
Pour into greased muffin tin or silicone molds.
Bake 20–25 minutes until set. Add a pan of water to the oven to keep them moist
Cool slightly and enjoy! They store beautifully in the fridge for 4–5 days.
🌱 Tips & Variations
Use turkey bacon or sausage for a lighter option.
Add chopped veggies for extra nutrients and color.
Make half the tray with veggies, half with meat to keep everyone happy.
