I cannot express how in love I am with the air fryer. I have resisted buying one because I have soooo many kitchen gadgets but I would get rid of my instant pot for this (maybe).
We are extremely picky when cooking chicken breast and now I canโ€™t keep it around!
Chicken sandwiches, fajitas, BBQ chicken pizza, chicken Caesar salad, chicken pesto, and the list goes on. 19 minutes at 375 is what I used. Seasoned with whatever I have (heavy on the Pampered Chef spices!)

Grilled grass-fed beef patties, homemade guacamole, and grilled romaine lettuce. One of our favorite meals that is also one of the easiest!
For the grilled romaine, I halve the romaine heads, add 1/2 basalmic vinegar, 1/2 avocado oil (can be olive), and fresh garlic. I put in a ziplock bag for 10 or so minutes so coated but not soggy. Place on the grill until starts to wilt.
Also, if bulk cooking, I grill to med-rare so I can reheat without making into a hockey puck.

Asian Cucumber Quinoa Salad
This salad is incredibly light and delicious!

1/2 cup uncooked quinoa (rinsed)
1 cup water
1/4 cup toasted pine nuts (optional)
1/4 cup chopped green onions
1 Cucumber chopped
1 Tomato chopped
2 Tbls each soy sauce, sesame oil, rice vinegar
1 tsp honey
1 tsp finely grated gingerroot (or a squeeze from tube).
** I usually quadruple because this salad is THAT good! **

Bring quinoa and water to boil, reduce heat and simmer approx 15 minutes. Transfer to a large bowl and let cool. Add cucumber, tomato, pine nuts, onions, and all of liquid ingredients. Enjoy!!

I make a marinade of the liquid ingredients and use for salmon and chicken which are excellent served with this salad.

These are amazing!!
You can use any kind of teriyaki or peanut sauce out of a jar to save time, but I've included my sugar and gluten free sauce recipe.

Asian Chicken Meatballs (Kennedy size batch)
4 pounds ground chicken (my fave) or turkey (beef is overpowering to me)
4 tsp sesame oil
1 tsp ginger ( I use the stuff in tube)
3 eggs
1.5 Tbls minced garlic
3/4 cup thinly sliced green onion
Mix together and make meatballs (I use my pampered chef medium cookie scoop) and bake at 400 degrees for 15-20 mins depending on how big the meatballs are. I like to brown on broil too :-) If you're in a hurry, can also fry in a patty.
Sauce
5 Tbls Braggs Aminos (or soy sauce)
1/4 cup natural peanut butter
1/4 cup brown rice vinegar
2 tsp garlic powder
1 Tbls sesame oil
1 tsp ginger
Heat on low until ingredients blend together
Serve on zucchini noodles

Btw, I didn't like the consistency of the meatballs after frozen and thawed, but we typically never have enough legt over to freeze :-)

Ground chicken meatloaf is a staple in our house and cooking it on a work night is so much faster since switching to muffin tins!
I have posted the recipe for Paleo Southwest Meatloaf in the comments. I always double to triple recipes so we can use for multiple meals and/or freeze! It is also a very forgiving recipe as I am constantly changing it up.
Doubling this recipe, I ended up with 24 "cupcakes". Spray the tins well and cook for about 30 minutes.
My typical 4 pound loaf will take 70+ minutes (also pictured).

Easy Breakfast Idea!
With already prepped veggies, these are a snap!
I ALWAYS use sprayed cupcake liners for super fast clean-up.
Layer bottom with veggies, add meat if you'd like. I typically use ground chicken sausage but am trying to use up ham for these ones.
Fill almost to the top with whipped eggs.
Bake around 20 minutes at 350 degrees or until done. I was able to make 12 with a dozen eggs.
You can also add grated sweet potato!
