For World Baking Day, here are some kidney healthy substitutes to consider in your recipes.

Low Potassium Alternatives:
All-purpose flour and cake flour are lower in potassium than whole wheat or oat flour.
Honey is a lower potassium sweetener. Avoid molasses which is high in potassium.

Milk Alternatives:
Coconut milk is a way to replace dairy without added sugar or potassium.
Nut milk is also a dairy free alternative

Low Sodium Alternatives:
Replace salt with herbs or spices (in moderation)
Yeast can also be a substitute for bakings soda which is high in sodium

Home Dialysis (Peritoneal Dialysis)

Home dialysis is a method of receiving dialysis overnight without having to go to a dialysis center three times a week. During peritoneal dialysis, a cleansing fluid will flow into your abdomen through a catheter and the lining of your abdomen will work as a filter to remove toxins, fluids, and salts from your blood due to your kidneys no longer being healthy enough to filter these substances themselves.

Don't forget Mother's Day is tomorrow. Here is a special kidney healthy recipe to indulge the special mother in your life!

Ingredients:
9 inch pie crust, uncooked
6 oz. ground chicken
1½ zucchinis (6 oz.), diced
2 teaspoon ground sage
½ teaspoon onion powder
5 eggs
1 cup rice milk
1 tablespoon poultry seasoning
3 slices of Swiss cheese

Directions:
1. Pre-heat oven to 350 degrees Fahrenheit.
2. Line a pie plate with pie dough.
3. In a sauté pan over medium heat, cook ground chicken, zucchini, sage and onion powder
remove from the heat and let cool to room temperature.
5. In a mixing bowl add eggs, rice milk and poultry seasoning and whisk together.
6. Place zucchini and chicken mixture into the bottom of the pie dough
pour egg mixture over the top.
7. Cut the slices of cheese in half and place on top of the egg mixture.
8. Place the pie plate on the lowest rack in the oven and bake 50 to 60 minutes, the edges should be browned and the center is firm, not runny.
9. Remove from the oven and let stand for 10 minutes before cutting into 8 pieces and serving.

Polycystic Kidney Disease is a genetic disorder in which cysts form within the kidneys causing the kidneys to eventually lose function. There cysts are non-cancerous but can lead to high blood pressure and kidney failure. If diagnosed early, there are medications and treatments that can help prevent complications.
