The Dandelions are back in Wisconsin!
I love this plant so much. Dandelion is embedded into our culture greatly, and it might not even be known!
There are many stories and games played and told as kids about this sweet plant. Like, blowing the seeds and making a wish, popping the head off of the flowers, and making dandelion crowns.
My current favorite story about dandelion is it's representation of the sun, moon and stars. The flower being the sun, roots the moon, and seeds the stars.
Oh and! Beyond all the fun games every single part of dandelion is edible!
A few of my favorite ways to prepare dandelions are:
1. Using the fresh spring leaves in a salad,
2. Baking with the flower heads.
3. Roasting the roots as and drinking as a coffee substitute, or mixing with teas.
4. Mixing the leaves in with an herbal pesto.
5. Making a cold water infusion with dandelion heads and mix with other fresh herbs.
6. I haven't tried to make a dandelion wine yet, but im adding that to this list because it seems like a fun and delicious way to use this herb β€
7. Lastly, simply sautee the greens with your other mixed greens.

+Use the leaves as a bitter tonic
+Use the roots to support the LIVER, and the kidneys, pancreas, gallbladder, spleen
+In an oil to massage breasts and/or treat irritated skin
+as a cooling and cleansing diuretic
