🍜 If you’re looking for an easy, delicious, high-protein, high-fiber soup, you must try this Pasta Fagioli Soup recipe by our Registered Dietitian 🍜
Serves: 4-6
Time: 35 minutes
Ingredients:
2 Tablespoons olive oil
1 container of Trader Joe’s Mirepoix (diced carrots, celery, onions)
3 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon salt, more to taste
1/4 teaspoon black pepper
1(15 oz) can Trader Joe’s diced & fire roasted organic tomatoes (with juice)
4-6 cups Trader Joe’s chicken bone broth (adjust based on consistency preferred)
1(15 oz) can Trader Joe’s great northern beans
1 bag- Carba-nada pasta (such as ditalini, elbows, or small shells)
Optional toppings: grated Parmesan cheese, chopped parsley, drizzle of olive oil
Instructions:
Sauté the veggies: In a large pot, heat olive oil over medium heat. Add onion, carrot, and celery; cook until softened (about 5-7 minutes).
Add garlic and seasonings: Stir in garlic, Italian seasoning, salt, and pepper. Cook for 30 seconds until fragrant.
Add tomatoes, beans, and bone broth: Pour in diced tomatoes (with their juice), beans, and bone broth. Stir and bring to a boil.
Simmer: Reduce heat and let the soup simmer for about 10 minutes to let the flavors meld.
Add pasta: Stir in the Carba-nada pasta and cook until tender (about 11 minutes), stirring occasionally so it doesn’t stick to the bottom.
Serve: Taste and adjust salt/pepper if needed. Serve warm with Parmesan, parsley, and a drizzle of olive oil.
