Wellness Recipe Wednesday!

Loaded Chopped Taco Salad Bowl

Ingredients:

Original recipe (1X) yields 4 servings
¼ cup extra-virgin olive oil
3 tablespoons lime juice
1 tablespoon cider vinegar
½ teaspoon salt
1 medium clove garlic, grated
2 medium heads romaine lettuce, shredded
2 (15-ounce) cans no-salt-added black beans, rinsed
1 small orange bell pepper, diced
1 small yellow bell pepper, diced
1 cup crumbled cotija cheese
1 cup chopped cherry tomatoes
½ cup thawed frozen fire-roasted corn
¼ cup chopped pickled red onions
¼ cup finely chopped fresh cilantro leaves and tender stems
1 medium jalapeño pepper, seeded and minced
2 cups unsalted tortilla chips

Directions
Combine ¼ cup oil, 3 tablespoons lime juice, 1 tablespoon vinegar, ½ teaspoon salt and the grated garlic in a large bowl; whisk well.

Add shredded lettuce, rinsed beans, diced orange and yellow peppers, 1 cup cotija, 1 cup tomatoes, ½ cup corn, ¼ cup pickled onions, ¼ cup cilantro and the minced jalapeño to the bowl with the dressing; toss until evenly coated. Serve with 2 cups tortilla chips.

This no-cook taco salad bowl is packed with fiber and plant-based protein from black beans. A medley of toppings add texture and flavor.

Wellness Recipe Wednesday!

Chocolate Peanut Butter Protein Balls

Ingredients:

▢1 ½ cups old fashioned rolled oats
▢1 cup natural peanut butter
▢¼ cup honey
▢2 scoops chocolate protein powder, (50-60 grams)
▢2 Tablespoons chocolate chips

Place oats, peanut butter, honey, protein powder and chocolate chips in a large bowl and stir to combine.
Getting the mixture to combine takes a little arm muscle and it may seem too thick at first, but it will come together as you keep mixing. Once combined, use a small cookie scoop to scoop and form the dough into balls.

Store in a covered container in the fridge or freezer.
Notes:
Honey: Use maple syrup instead of honey.
Peanut butter: Any nut butter will work for this recipe! You can use almond butter, cashew butter, tahini or sunflower butter.
Protein powder: I prefer the chocolate protein powder as it pairs nicely with the peanut butter and chocolate chips, but feel free to use your favorite brand and flavor of protein powder for this recipe!
Chocolate chips: You could always skip the chocolate chips and add a different mix-in. Some great examples include: dried cranberries, raisins, shredded coconut, crushed nuts, cacao nibs, chia seeds or ground flax seeds.

These chocolate peanut butter protein balls require only 5 ingredients and about 10 minutes of prep time. They're the perfect no bake snack to meal prep perfect for the week.
