Chicken Tortilla Soup (Instant Pot or Stovetop)

Ingredients:
1–2 tablespoons olive oil
1 onion, diced
5 garlic cloves, rough chopped (or sub 1–2 tablespoons granulated garlic)
1–2 cups carrots, diced
1 cup celery, diced
14.5 ounce can diced tomatoes and juices (or fire-roasted) or 1 1/2 cups diced tomatoes w/juices
4–ounce can, mild green chilies (or sub a poblano chili, diced)
2 lbs chicken (boneless, skinless, thighs or breasts) left whole
1 cup dry black beans, or sub 1 to 2 14-ounce cans black beans (or sub corn)
4 cups chicken stock or broth (or water with 4 chicken bouillon cubes)
2 cups water
2 teaspoons salt, more to taste
2 teaspoons cumin
2 teaspoons chili powder
2 teaspoons dried oregano
lime juice from 1-2 limes

Optional: for a smoky heat, add a little chipotle (either the adobo sauce from canned chipotles, or a little ground chipotle powder to taste. )
Garnish with any or all of the following: tortilla strips, grated cheese, sour cream, avocado, hot sauce, cilantro, fresh jalapeño, scallions, and lime wedges.

Instructions:
1. In an Instant Pot set to “saute” (or Dutch oven over medium heat), saute onions, garlic, carrots and celery in olive oil, for 4 minutes or until fragrant, stirring (If using granulated garlic add with the spices, and if using fresh poblano chili, add it now).

2. Add the diced tomatoes and their juices, green chilies, whole chicken, and black beans. Pour in the chicken stock, water, salt and all the spices and give a good stir.

3. Set the Instant Pot to pressure cook on high for 25 minutes if using dry beans. See notes for canned beans. Manually release. See notes for modifications. Alternatively, if cooking on the stovetop, bring it to a boil, cover, and simmer on medium-low heat for 30 minutes, until chicken is tender and pulls apart easily.

4. Shred the chicken with two forks, either right in the pot, or in a bowl. (At this point, you could add frozen corn to the soup, heating it up.) Return the shredded chicken to the pot and simmer on low for a few minutes.

5. Squeeze with a generous amount of lime juice and taste for salt, adding more if necessary- especially if you used dry beans, you will need to add more. You want a good balance between lime and salt. (If the soup tastes bland, it probably needs more of each.)

6. Divide among bowls and top with tortilla strips, grated cheese, sour cream, scallions or avocado and cilantro. Add hot sauce for added heat.

Did you know Dr. Andrea is Webster Technique Certified??

What is the Webster Technique?

Chiropractic care in pregnancy is vital to the normal physiological function of both the mother and baby throughout pregnancy and birth. More women and birth providers are discovering the many benefits associated with chiropractic care in pregnancy and recognize this area of expertise through Webster Certification.

The Webster technique is a specific chiropractic analysis and diversified adjustment. The goal of the adjustment is to reduce the effects of subluxation and/or SI joint dysfunction. In so doing neurobiomechanical function in the sacral/pelvic region is improved.

Sacral subluxation may contribute to difficult labor for the mother (i.e., dystocia), caused by inadequate uterine function, pelvic contraction, and baby mal-presentation. Correction of sacral subluxation may have a positive effect on all of these causes of dystocia.

Need lunch ideas for your kiddos? Here is a great healthy one for you to try!

https://mykidslickthebowl.com/hand-roll-sushi/

Ingredients

▢2 nori sheets
▢1 cup sushi rice cooked

Fillings Ideas
▢Colourful vegetables: Cucumber, capsicum, carrot, avocado, cabbage, sprouts. sliced
▢Protein: salmon, chicken, beef, tofu tempeh,
▢Mayonnaise, soy sauce, teriyaki sauce

Instructions
Start by cutting a nori sheet in half. Lay the nori sheet shiny side down onto your bench or counter top.

Place approximately a ¼ cup of cooked sushi rice on the ½ of the nori. You want a square of rice covered nori. Use a knife or spatula to squash and spread the rice to cover the nori.

Lay your chosen sushi toppings on top of the rice on an angle, so that they run from the top right hand corner of the rice to bottom left hand corner.
prinkle some water on the empty side of the nori sheet, roll your sushi into a cone starting from the bottom right hand corner of the rice covered nori

Water is your friend, whenever rolling sushi or sushi balls, always have a bowl of water near by. Keep your hands and your utensils wet and this will stop the rice sticking to you.
Be creative with fillings, you can make your sushi hand rolls any flavor, so pick fillings your family will like.
Nori sheets: Seaweed sheets can be found in most grocery stores.

Sushi Hand Rolls are easy without the pressure of forming the perfect roll with a bamboo mat, and they are easy for kids to pick up and handle
