Want an easy trick to making fast "sun dried" tomatoes at home?
I had a big batch of cherry tomatoes that needed to be used, so I whipped up some today with a few simple ingredients from my homegrown herbs.
I slice them in half, de-seed them (just give little pinch) pat as dry as possible. Using a meat press or a fork, squish them flat onto parchment paper. Spray with a little olive oil and season with some Italian seasoning and salt & pepper. Pop in your oven at 200 for 4 hours or in your air fryer using the dehydrator setting.
When they are done, pop into a jar of your choice with additional herbs and some really good olive oil (don't skimp on the good stuff!)
Refrigerate in airtight container, use within 2 weeks.
