Meal Prep Monday: Turmeric Ginger Chicken Bowls 🥣

This week we’re supporting your joints, muscles, and nervous system from the inside out.

Ingredients (4 servings):
- 2 lbs chicken breast, cubed
- 2 tsp turmeric
- 1 tbsp fresh grated ginger
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 2 large sweet potatoes, cubed
- 3 cups broccoli florets
- 2 cups cooked quinoa
- Salt + pepper to taste

Instructions
1. Preheat oven to 400°F.
2. Toss sweet potatoes + broccoli in olive oil, salt, pepper. Roast 20–25 minutes.
3. Season chicken with turmeric, ginger, garlic, salt + pepper.
4. Cook in skillet over medium heat until fully cooked (6–8 minutes).
6. Assemble bowls with quinoa, roasted veggies, and chicken.
