Hi, I’m Tara, a wife, athlete, and mom who has been navigating life with Alpha-Gal for the past 5 years. Bit by a Lone Star tick in Oklahoma in August 2019, I went through many months of hives, severe gastrointestinal distress, and many episodes of near anaphylaxis before being diagnosed with Alpha-Gal. At that time, the allergists and doctors were not well-informed and I had to do much of the research myself and through the small Alpha-Gal community. I personally, know how scary and desperate I felt going through this condition alone, and advocating for myself when the traditional medical community was of little help. Through the help of holistic practitioners, a brand new diet, and seeking out answers, I was able to find a lifestyle that I was able to thrive in.

We’ve been a bit busy around here! We sold our house, renovated the new house in the country then had to move in the middle of a blizzard with 12 inches of snow. (Pic before most of the snow.) So I’ve been eating a lot of whatever is available to me and quick to make and not documenting it, haha. But things are finally starting to slow down this week, if you are close to Paducah, KY I highly recommend for delicious vegan treats and their meals are excellent as well!

I’m a busy mom of two and it’s Christmas season, and I need fast healthy lunches to keep me going through the plays, presents, and elf duties. 🤪 This one is about as simple as they come: sauté some fresh shrimp on a skillet with garlic and olive oil, make some white rice, cut your avocado and add some crispy onions, hot sauce, and yum yum sauce. (Double check all ingredients, especially if you are newly-diagnosed with alpha-gal.) It’s really delicious, not boring, and a new favorite for me.

If you are like me, I’m tired from the holidays but I still want a warm-tastes like homemade cinnamon muffin that is dairy-free. This mix is actually easy enough for my 9-year-old to handle solo. (The only downside: it does contains natural flavors—if you are newly diagnosed or highly reactive, I would NOT recommend this mix.)

Although it’s sometimes hard for me to put myself out there, this article reminds me of the reason I felt like I should start this page. This could have been me. And I’m praying it doesn’t have to happen to anyone else.

I remember several months after my lone tick bite 6 years ago, when I had no idea what was going on with me. I just kept getting sick all the time and felt like I was slowly dying but I had no idea why. There were two distinct times I know it was the grace of God over me for protection. The first instance, I was at a fancy restaurant on vacation, and I ordered a ribeye steak smothered in mozzarella and mushrooms because I loved steak and I ate half of it, but my one year old, kept crying and crying so I ended up leaving the restaurant early and only eating half my steak. About three hours later, I was so sick, throwing up constantly, my throat tightening and having the worst headache of my life. I never finished the other half of the steak. And then a few weeks later, my husband had just bought some ribeyes and was going to grill us some steaks but they went rancid very quickly and so he didn’t grill them. A few weeks after that, and sixth months after my tick bite, I finally received my diagnosis of Alpha-Gal.

I wish there would have been more information and awareness when I was first diagnosed, it would have helped so much and that’s why I feel so compelled to help others on here. And I would like to give a shout-out to the community here on Facebook for what they’ve done already to alleviate some of our struggles. The Alpha Gal

Alpha-Gal Friendly Candy-
This was my daughter’s idea for a video so we gave it a go and she was a great helper. It’s a little late but here are some alpha-gal friendly candies that are vegan. To be honest, I am always bummed about food during the holidays because of my allergy restrictions. But I’ve tried to make the best of it and find goodies that I can eat during the holidays. Also, my Momma is just the best and always makes me separate non-dairy desserts for family functions. It warms my heart every time. If you know me, you know how much I love food and sweets and I still hope some more companies make some more delicious treats that are alpha-gal friendly.

It’s been a busy couple of weeks, but I did have time recently to make a yummy healthy pizza for lunch. It’s low carb and alpha-gal friendly ingredients. Make sure to double check the pre-made pizza sauce to check for “natural flavoring.” Opt for an organic brand or make your own if you are highly reactive. And please comment here if you’ve found a good dairy free mozzarella, I’m still struggling to find a good melting and delicious-tasting one for pizza.

Today I made some delicious and healthy Ginger Salmon Lettuce Wraps, it’s alpha-gal friendly, dairy free, and low-carb. It’s an easy and fast dish to prepare for a quick and satisfying lunch.

As always, check the labels of each ingredient for natural flavors, carrageenan, mono and diglycerides, or ingredients that you might react to. (The yum yum sauce contains egg, which some people that are highly-sensitive might react to.)

Who Is missing a good glazed donut?

Fluffy Donuts with Simple Glaze (Alpha-Gal Safe)

Ingredients

Dough:
• 1 ⅛ cups warm milk (can use dairy-free milk)
• ¼ cup white sugar
• 2 ¼ teaspoons active dry yeast
• ¾ cup melted butter (can use dairy-free butter)
• 2 beaten eggs
• 4 cups all-purpose flour
• ¼ tablespoon salt

Glaze:
• 3 cups powdered sugar
• ½ teaspoon vanilla extract (or another flavoring of choice — almond, maple, lemon, etc.)
• ⅓ cup water or dairy-free milk



Instructions
1. Activate Yeast:
Warm the milk until just slightly warm to the touch (not hot). Stir in the sugar and yeast. Let sit for 10 minutes, or until foamy.
2. Mix Wet Ingredients:
Melt the butter and beat it together with the eggs.
3. Prepare Dry Ingredients:
In the bowl of a stand mixer fitted with a dough hook, add the flour and salt.
4. Combine Dough:
Pour the butter and egg mixture into the flour. Gradually add the milk and yeast mixture while mixing on medium speed until a soft dough forms.
5. Chill Dough:
Cover the bowl tightly with plastic wrap and refrigerate for at least 8 hours, or overnight.
6. Shape Donuts:
Remove dough from the fridge. Either pinch into small balls or roll out on a floured surface to ¼–⅓ inch thickness and cut into donut shapes.
7. Second Rise:
Place shaped dough on a parchment-lined tray and let rest for 1 hour at room temperature.
Tip: If re-rolling scraps, let the dough rest 15 minutes before reshaping.
8. Fry Donuts:
Heat oil in a deep pan to 350°F (175°C). Fry donuts in small batches until golden brown on both sides, about 1–2 minutes per side. Remove and place on paper towels to drain.
9. Make Glaze:
In a medium bowl, whisk together powdered sugar, vanilla (or your preferred flavoring), and water or milk until smooth.
10. Glaze Donuts:
Dip warm donuts into the glaze, let excess drip off, and place on a rack to set.



✨ Flavor Variation Tip: Instead of vanilla, try almond extract, maple extract, lemon juice, orange zest, or even a dash of cinnamon for unique glaze flavors.

With alpha-gal, there are many foods to avoid to keep yourself from having an allergic reaction. Alpha-Gal affects individuals differently, but if you are newly diagnosed, it is good to be extra careful in the beginning. Obviously, do not eat mammal meat, which includes all beef, pork, venison, etc. And sadly, for many people dairy products can cause a reaction as well. In this video, I highlight some of the triggers that can cause an allergic reaction in individuals who have severe reactions. I was one of those for my first two years of having alpha-gal and I was not aware of these different types of triggers. Look carefully at labels and look for key words like natural flavors, mono and diglycerides, gelatin, and carrageenan.
