I’M WEIRD! Yeah, I’ve been called “weird” or “strange” many times. Comments or remarks because I try and live healthy…most of the time.

I’m weird for:

- waking up early (usually 5am)
- going to bed early (I try to be in bed by 8-8:30)
- not drinking alcohol (I will occasionally)
- refusing to eat fast food 🤮
- being the mom that didn’t have the “good” junk food 🤦🏻‍♀️
- lifting weights🏋️‍♂️
- for being a freak about my health!

How have Americans become so far removed from cooking real food? Or actually walking through a grocery store? What about even walking outside (yes, even when it’s cold)?

Why are all these healthy habits considered weird now?

Maybe I’m not the weirdo?! 😳😬🤷🏻‍♀️

STIR FRY! It’s quick, easy, packed with fiber/protein, and absolutely delicious!

I didn’t measure, but here are my ingredients!

- frozen stir fry vegetables (2 bags)
- frozen shelled edamame (1 bag)
- frozen sliced mushrooms (1 bag)
- frozen Brussel sprouts (1 bag)
- grilled 100% grass fed filets

Sauce:
- coconut aminos (1 small bottle)
- Worcestershire sauce (1-2 tbsp)
- ground ginger (1-2 tbsp)
- sesame oil (1 tbsp)

Directions:

I roasted the Brussels sprouts until done. I fried up the vegetables, mushrooms, and edamame. Drained, then added the sauce ingredients, along with the cooked sprouts.

We grilled the steak, and added it to the stir fry. (Optional.)

Since it was all frozen ingredients, it was super easy and quick!

VEGETABLE CHILI?! 🌶️ Yep! Don’t forget to add some mixed vegetables to your chili. I mean, why not????

Here is my recipe!

Ingredients:
- 2 lbs ground beef (100% grass fed, 90% lean)
- 1/2 C chopped red onion
- 15 oz tomato sauce
- 14-15 oz fire roasted tomatoes
- 14-15 oz diced tomatoes
- 12-15 oz mixed frozen vegetables
- 31 oz mixed beans ( I used 3 diff beans)
- 1.8-2 oz chili seasoning

Cook up the ground beef and onions. Drain if needed. Once done, add in the tomatoes, tomato sauce, frozen vegetables, beans, and chili seasonings.

Cook until frozen vegetables are done!

*For an added delight, roast up some sweet potatoes and top them off with the chili! 😋

This recipe is “my cousin-friendly” - meaning you don’t need to use any fresh ingredients! 😂

WHAT DO YOU SEE? Sometimes I look back at pictures during the worst of my menopausal symptoms and think “who was that?!”😩

I wasn’t myself for about 1 1/2 years before I figured out how to treat my menopausal symptoms. 🤦🏻‍♀️
