Ginger Miso Gravy (Vegan)

Warm, comforting, and deeply nourishing — this Ginger Miso Gravy is one of our favorite flavorful alternative additions to bowls, veggies, grains, and seasonal dishes. It’s full of plant-based goodness and comes together quickly with simple whole-food ingredients. Use organic ingredients whenever possible for the cleanest, most vibrant flavor.
Ingredients:
1 medium grated yellow potato
½ medium grated sweet potato
1 tsp finely grated ginger
1 cup chopped celery
1 medium grated carrot
2 Tbsp miso paste
½ cup Braggs liquid aminos
½ cup nutritional yeast
1 tsp cracked pepper
1 Tbsp sage
1 cup water
2 Tbsp cornstarch
Directions:
Add the grated potatoes, ginger, celery, carrots, miso, and water to a blender. Blend on high for 5 minutes.
If the mixture is too thick to blend, add a little water — you're basically making a vegetable smoothie.
Pour the mixture into a small pot and bring it to a boil.
Once boiling, reduce the heat to a simmer. Add the remaining ingredients except the cornstarch. Bring back to a boil.
In a separate bowl, mix the cornstarch with a bit of water to form a paste. Add to the gravy to thicken (or add water to thin).
