*Healthy breakfast muffin recipe!

Egg Muffins

ingredients

1/2 lb pre-cooked ham, diced, (can sub bacon or sausage)

1 bell pepper, finely diced

1/2 onion finely diced

10 eggs

1/2 tsp salt

1/2 tsp pepper

2 tsbp avocado oil, (we like bacon fat)

instructions

Preheat oven to 375° Fahrenheit.

Chop ham, bell pepper and onion as noted.

Crack eggs in a large bowl and whisk well. Add the chopped ingredients and 1/2 tsp each of salt and pepper and mix.

Grease muffin tin with fat/oil (make sure each section is covered well from top to bottom or the eggs will stick). Or you can use muffin tin liners.

Spoon the egg mixture into the muffin tin, filling them almost full (they will puff up while cooking).

Place in the oven and bake for 20 minutes. Remove and allow to cool slightly before serving. These can be refrigerated and keep well for 4-5 days (great for meal prep)Calories: 311kcal, Carbohydrates: 3g, Protein: 26g, Fat: 20g, Saturated Fat: 6g

HOT HONEY CHICKPEA BOWLS

Hot Honey Chickpea Bowls that are the perfect balance of sweet, spicy, and savory! Loaded with flavor and nutrition, these hearty bowls make for a delicious lunch or dinner recipe. They're also great for prepping in advance and taking on-the-go. Make this easy vegetarian recipe in 20 minutes or less for a meal that everyone will love!

Ingredients
Hot Honey Chickpeas
▢1 Tbsp avocado oil
▢2 tsp minced garlic
▢1 15 oz. can chickpeas (drained)
▢1/4 cup honey
▢2 Tbsp sriracha
▢1 tsp salt
▢1 tsp pepper
▢1/8 tsp cayenne (optional)
▢1/4 tsp crushed red pepper (optional)
Bowls
▢2 cups cooked brown rice
▢4-5 stalks celery (chopped)
▢4 medium carrots (chopped or shredded)
▢4 Tbsp healthy ranch dressing (optional, for topping)
▢cilantro (for topping)

Instructions
In a skillet or sauce pan, heat up the oil and garlic over medium heat.
Add in the chickpeas.
Whisk together the honey, sriracha, salt, pepper, cayenne, and crushed red pepper in a bowl.
Pour the hot honey sauce over the chickpeas and bring to a simmer.
Cook for 5-6 minutes, stirring occasionally, until the sauce begins to thicken and reduce.
Remove from heat and let cool as the sauce continues to thicken for 3-5 minutes.
Serve the hot honey chickpeas over cooked rice along with celery, carrots, cilantro, and a drizzle of ranch dressing!
Notes
Feel free to adjust or omit the cayenne and crushed red pepper to your own taste.
For storing, it’s best to keep the hot honey chickpeas separately from the veggie bowls. They can last in the refrigerator for 3-5 days or the freezer for up to 3 months!

Mayville State Comet Aquatics

Good morning, Comet Followers,
I hope everyone is staying warm during these cooler days.
Our first lesson session is now live (link below), starting February 2. This spring, lessons will either be on Mondays and Wednesdays or Tuesdays and Thursdays. We also have our first lifeguard classs on March 7 and 8th, will do a second lifeguard class either late April or mid-May, and a WSI class around the same time.

Arobics update- we still have not settled on a time for Mondays and Wednesdays, but Tuesdays and Thursdays will remain 10:30 am- 11:30 am.
After February 1, we will have two kids' kayaks that the pool will be able to use for the winter. These can be reserved for 30 minutes at a time during scheduled kayaking times during the week. I am working on the days and times. Kayak reservations are free; normal pool admission ($3) applies.
We are still working on the SUP, and as soon as I have more information, I will let everyone know. Like the kids' kayaks, these would be reserved during specific times; normal admission applies.
