Hearty, nourishing, and packed with plant-based goodness,this stew is the perfect way to refuel after a workout or warm up on a chilly day.
Slow Cooker Sweet Potato & Lentil Stew
Ingredients:
* 2 medium sweet potatoes, peeled and diced
* 2 carrots, chopped
* 2 celery stalks, chopped
* 1 small onion, diced
* 3 cloves garlic, minced
* 1 cup dry green or brown lentils (rinsed)
* 1 tsp ground cumin
* 1 tsp smoked paprika
* ½ tsp turmeric (optional but great for inflammation)
* Salt & pepper to taste
* 4 cups vegetable broth
* 1 can (14 oz) diced tomatoes
* Juice of ½ lemon (brightens it up!)
* Optional: handful of spinach or kale stirred in at the end
Instructions:
1. Add all ingredients (except lemon juice and greens) to your crockpot.
2. Cook on low for 6–7 hours or high for 3–4 hours, until lentils and veggies are soft.
3. Stir in lemon juice and greens during the last 10 minutes.
4. Adjust seasoning to taste and serve warm.
Serve with brown rice, quinoa, or warm bread for extra comfort.
