Verdi EcoSchool is a project-based private school rooted in sustainability and learning by doing. The community that has been built around this school has changed my life and impacted me in so many beautiful ways. I am incredibly grateful to be a part of such an amazing school. 🍜 Cold Sesame Noodle Salad with Marinated Tofu 🍜

I pressed & marinated the tofu, toasted the sesame seeds, chopped the veggies, & made a delicious tangy tahini soy sauce!!! This is a great meal prep idea. You can keep the sauce in a separate container and add to your portion when ready to eat. My clients love it!
