🪷Part 1 🪷

We had such a fun weekend celebrating at my wonderful brother-in-law Andrew and gorgeous sister-in-law Ramya’s TWO spectacular weddings!💍💖🥹

They are truly a perfect couple who loves each other so deeply!

We are blessed 😇 with a beautiful family and we spent the weekend laughing, dancing, eating amazing Indian food, and celebrating love.

It was wonderful to learn more about the Hindu wedding traditions like when the bride and groom compete to throw turmeric rice 🍚 on each other’s heads and race to find a ring 💍 in a large pot!

❤️Happy Valentine’s Day! ❤️

I am spending the day wrapped in Brian’s arms celebrating 🥳 this day of love. 💞

This morning, I made Brian some vegan chocolate chip pancakes 🥞 & banana 🍌 bread and he gave me some lovely red roses 🌹, a sweet card and a beautiful gift 💝.

His amazing mama Susan got us a gorgeous box of vegan chocolate truffles.

My favorite sweet of all is this beautiful box of durian fruit that we got yesterday from H-Mart! The Monthong variety of durian is incredible sweet, creamy and tastes like vanilla custard.

Even during the winter ❄️ time, I eat the rainbow 🌈! 😋

This weekend, I spent some time making food for my husband’s parents because my mother-in-law has Covid. She is feeling a lot better but I wanted to do what I could to support and whipped up a vegan brunch to drop off for them (see pic #3). I made them a tofu scramble, vegan sausage & sweet potatoes fries with some fresh orange 🍊 juice and gluten-free waffles 🧇. I also made them our Mushroom Bourguignon which I will post photos of tomorrow. They lovedddd all the yummy food and we can’t wait until they are all feeling healthy again.

Tonight, I made myself such a satisfying, tasty & energizing dinner! This really hit the spot after a busy day with my husband of fun: hiking, working, setting up our new electric fire 🔥 place and shopping for plants 🌱 for our apartment. Peep our super cute new bamboo bonsai 😍

Also, exciting progress today: I ordered some new hiking boots 🥾 & crampons to do some winter ❄️ mountain 🏔 climbing! Can’t wait 🤩

Final important news of the day: I think my salads 🥗 are finally getting big enough to compete with my mama what do you think 🤔?! 😂

-2 large English cucumbers
-1 big handful spring mix 🥬
-1 rainbow carrot 🥕
-1 large red pepper
-1 yellow pepper
-1 cup shredded purple cabbage
-1 cup mung bean sprouts
-2 shredded organic nori sheets
-3-4 diced green onions
-1/2 medium avocado 🥑
-1/4 cup pickled ginger
-Dressing: 2 Tbsp of tahini mixed with fresh lemon juice & coconut aminos

Looking for a festive holiday dinner?! 🍽 🌟

Last week, I noticed that my husband had a ton of cauliflower so (again) I made our Festive Whole Roasted Cauliflower with Tahini Dressing and Pomegranate from our show with Chef AJ

I had a fun idea 💡 to make extra sauce by using 1 can of white beans. I also made a green batch of the sauce (to add that extra Christmas 🎄 color) by blending the dill & parsley into a portion of the sauce.

As I said before, this is the perfect 👌🏽 main course for any New Years or holiday feast. My husband loved it. I also made him a vegan charcuterie board with Myokos vegan cheeze 🧀, Trader Joe’s vegan queso, brown rice crackers, berries 🍓, cucumbers 🥒, hummus & dates.

I made a raw vegan version of the dish for myself with cucumber noodles, dill, parsley, pomegranate, thinly sliced radishes & cherry tomatoes 🍅.

Merry merry Christmas 🎁 to you and your loved ones from our wild crew! 🦄 🐃🐉 🦥 🐼

We had an amazing day filled with too many gifts 🎁, always enough love ❤️ and a whole lotta laughs. After presents, I made Brian’s family a big vegan brunch.

One of my favorite parts of the day was when we all surprised Brian’s amazing mama Susan with a new exercise bike 🚲. The look on her face was so precious. She is truly the most generous person and she more than deserves it.

Although, I was missing my parents and brother it was very special to FaceTime with them and open some gifts together. It was also a blast to watch my mama Elspeth cooking 👨‍🍳 live on Chef AJ’s Christmas YouTube show.

Before dinner 🍴, we watched the new Pixar movie 🎥 “Soul” which was amazing 🤩. Go watch it on Disney+

We received so many amazing gifts this year. I loved them all from my favorite brand of earrings from my love to new Xero running 🏃‍♀️ shoes from my parents, from an essential oil diffuser and wonderful oil blends from Brian’s bro Andrew to a beautiful marble serving platter from Brian’s other brother Mike, from a galaxy 🌌 night lamp to an electric fire 🔥 place from Brian’s mama....our apartment will certainly be warm, cozy and filled with lots of love this winter ❄️.

While the gifts are fun, there is truly nothing better than being all together.

Big beautiful salads 🥗 are so satisfying! I’ve come a long way in the last 10 years from the 17 year old girl 👧 who had never eaten a salad. What’s in your favorite salad? I’m always looking 👀 for fun new ingredients. Post your favorites below 👇🏽

This dinner salad had....
-1 large cucumber
-1 head red leaf lettuce 🥬
-1 carrot 🥕
-1 large golden beet
-4 Campari tomatoes 🍅
-2 radishes
-1 handful microgreens
-1 avocado 🥑
-a few Castleventrano olives
-dressing: 2 scoops of coconut yogurt mixed with fresh lemon juice, Frontier garlic & herb blend, Bensons Table Tasty no-salt seasoning, chopped dill, green onions & parsley (I loveeee ❤️ fresh Herbs)

After eating this, I felt light, bright, energized and my digestion has been absolutely perfect. 👌🏽

Maybe one day, I’ll grow up to have a salad bowl as big as my mama’s ginormous ones! 😂

Who knew that fall 🍂 was flower season?! 😍

I loved visiting Doepkens Farm this fall in Maryland close to where my parents live. I met the owner and found out that this farm has been operational for over 100+ years. They used to grow primarily vegetables and now they are a flower 💐 farm.

While I was visiting, I also made friends with a tiny 8-week old kitty 🐱 named Tassels who jumped into my arms. Growing up with big German Shepherd dogs, I’ve never been much of a cat person but I’ve got to say...Tassels may have converted me 🐈.

In the cute farm store, Doepkens Farm has the most gorgeous assortment of bouquets 🌸, pumpkins and squash. My family and I stocked up on all the varieties of pumpkins and squash that we could to use in our upcoming 3-part Thanksgiving cooking series in November called Pardon My Turkey!

Each class is approximately 90 minutes long and has a fun theme:

-Exciting Entrees & Delicious Desserts, November 12th
-Beautiful Breakfast & Brunch, November 19th

I AM SO PROUD OF US! 😍🥂

For the past few months, my amazing family and I have been working very hard on creating, developing & hosting our online cooking series. We just finished up our fifth series called Fall in Love with Flavor which featured French, Indian and Thai classes. The series was full of 33+ amazing vegan, gluten-free and oil-free recipes such as Chocolate Soufflé, Crêpes, Vegan Moule Frite, Vegan Scallops, Chapati, Papadums, Samosas, Thai Corn Fritters with Chili Sauce, Pumpkin Curry & Thai Flan.

I have also been busy filming 🎥& editing videos for our Vegan News Daily YouTube Channel (go check it out 👀 and subscribe for awesome recipe 😋 videos!)

I feel so fulfilled by this work helping to inspire others to learn how to maintain a whole food plant-based lifestyle full of delicious fruits and veggies. In every class, we teach our members how to make SO many delicious vegan recipes. We also teach about the nutritional benefits of ingredients, explain why we don’t use salt/oil/sugar in our recipes, give helpful vegan lifestyle tips and tell fun cultural & historical legends.

I adore working with my mama Elspeth aka and it has been so special to see her shine 🌟 and share her gifts 🎁 with so many people. I am truly blown away by her skills and grace in speedily cooking (we don’t call her The Speedy Vegan for nothing 😉) and beautifully plating the recipes. 👨‍🍳

Most importantly, I feel so proud of the donations that we have made to plant-based food banks like (we donate 10% of all profits) and the supportive community we have built with our cooking series members. It fills my heart with so much love knowing that what we are doing is bringing joy into people’s lives.

-My entire family has been vegan 🌱 for almost 9 years! 🌎🐷🐄 🐓🦃
-I have been raw vegan for the past 4 years and I drink lots of fresh juice daily! 😋
-I suffered terribly (bleeding, oozing, cracking) from topical steroid withdrawal from cortisone creams that I was prescribed for 14+ years for eczema.
-I healed myself by detoxing with raw plant-based foods, juices, rest, nature 🌲, yoga 🧘‍♀️ and meditation
-I became a Certified Detox Specialist + Certified Yoga Instructor
-My mom is from Zimbabwe and my dad is from the USA 🇺🇸
-Together, we co-host, create and produce online vegan cooking series for our business
-In the past 3 months, we have hosted 21+ online vegan cooking classes 👨‍🍳 that have reached over 40,000 people 🤩 and raised $3,000+ for plant-based food banks like
-I met my amazing husband Brian 4 years ago in Jamaica 🇯🇲 and we fell in love immediately.
-We traveled Latin and South American together leading yoga, sound healing and detox retreats in Costa Rica, Perú and Nicaragua
-We got married three years ago in southern France 🇫🇷 (where my mom’s entire family lives!)
-We lived in the jungle in Costa Rica last year (we even had our own bamboo greenhouse and planted fruit trees 🌲)

CREAMY THAI COCONUT 🥥 PINEAPPLE 🍍ICE CREAM 🍦

This delicious ice cream 🍨 is decadent, yet light! You can enjoy this dairy-free healthy recipe for breakfast, dessert or dinner 😋.

Pineapples🍍have incredible anti-inflammatory properties. The fruit contains a protein-digesting enzyme called bromelain. 

Bromelain works to break down proteins in order to form peptides and amino acids in the body.

Pineapples got their name from the Spanish word “piña” which means pinecone. It actually is not just one fruit, but 100–200 little separate fruitlets fused together.

Did you know that...Thailand is actually the largest grower of of pineapples 🍍 in the world?! In Thailand, you can buy coconut ice cream on the streets from vendors. The traditional Thai ice cream contains egg yolks.
