I promise… it works every time 😂🤍🥰

And because I love you girls and I’m a Doctor of Functional Medicine + Nutritionist… here’s one of my FAVORITE super simple, feel-good cupcake recipes 👇🏼✨🥰

✨ Easy Gluten-Free Vanilla Cupcakes ✨

These are light, soft, and so easy you literally cannot mess them up 🙌🏼🥰

Ingredients:
• 1 cup gluten-free flour (1:1 baking blend)
• 2 eggs
• 1/3 cup coconut sugar (or monk fruit for lower sugar)
• 1/3 cup melted butter or avocado oil
• 1/2 cup unsweetened almond milk
• 1 tsp vanilla extract
• 1 1/2 tsp baking powder
• Pinch of sea salt

Instructions:
1. Preheat oven to 350°F 🥰
2. Mix all ingredients together in one bowl (yes, ONE bowl 🙌🏼🥰)
3. Pour into lined cupcake tray (fills about 8–10 cupcakes) 🥰
4. Bake 18–22 minutes until golden + fluffy 🥰
5. Let cool… then top with your favorite zero-sugar frosting 🤍🥰

That’s it. No stress. No weird ingredients. Just simple, real food that still feels like a treat ✨🥰
