Foodie Friday:

HOT COCOA COOKIES (Makes 16 Servings) 🍫🍪

INGREDIENTS: (all organic if possible)

4 oz 80-90% unsweetened dark chocolate, chopped

1/2 cup coconut oil

1 1/4 cups almond flour

2 tbsp flax meal

1 tsp baking powder

1 tsp baking soda

1 cup cacao powder, divided

2 eggs

1 tsp pure vanilla extract

1/4 cup maple syrup

1/4 cup coconut sugar

DIRECTIONS:

1. Preheat the oven to 350°F and line a baking sheet with parchment paper.

2. Melt the chocolate and coconut oil in a double boiler on medium high, stirring constantly. Alternatively, you can add to a microwave-safe bowl and warm about 30 seconds at a time until it’s melted. Set aside to cool.

3. Whisk together the almond flour, flax meal, baking powder, baking soda, and ¾ cup of the cacao powder in a medium mixing bowl.

4. In a small bowl, whisk the eggs with vanilla, maple syrup, and coconut sugar until well combined. Add the melted chocolate and mix well.

5. Pour the wet ingredients into the dry and mix well. The dough will be very thick and stiff. Refrigerate the dough for about 10 minutes, then roll it into a ball.

6. Use a tablespoon to scoop out the dough, then form into balls. Roll each cookie ball into the remaining ¼ cup of cacao powder and place on the prepared baking sheet. Press the cookies slightly with the bottom of the glass to flatten. Bake for 12-14 minutes.

7. Cool the cookie on the baking tray for 7 minutes, then transfer to a cooling rack for another 10 minutes. Garnish with more cacao powder if you like and enjoy!

Try This Thursday: Commit to One Healthy Habit 1️⃣

Ever feel like you need to hit every one of your health goals in order for you to feel like you’re doing enough? Scratch that mentality! So many of us bid our wellness habits farewell until Jan. 1st because we feel like we can’t keep them up over the holidays.

TIP: Instead of ditching it all, commit to one or two health habits that are easy enough to maintain, even on the busiest days of the holiday season. Maybe it’s drinking half of your weight in ounces of water and taking your supplements every day. The bottom line: Choose something simple that will help you feel nourished—without stressing you out!

Wellness Wednesday: Rethink Your Gift Wrap 🎁

Curbside trash spikes 25 percent between Thanksgiving and New Year’s Day! Reduce your garbage this year!

*Use old maps- Look for them at thrift or vintage stores!

*Seek out hand-woven baskets at your natural health food store. Most are fair trade and brightly colored. Fill them with goodies such as seasonal fruit or nuts. (Makes two gifts in one)

*Newspapers, magazines, paper bags, scrap paper, or anything you have lying around the house!

*Add a little nature to your brown Kraft paper- head outdoors and collect berries, evergreen clippings, pinecones, for a festive feel! Attach with twine or ribbon.

*Fabric- think T-shirts, a scarf, dishcloths.

*Mason jars- I have a plethora of jars from the monthly juice box I use to get. Ideas: cookie, hot cocoa, or soup mixes. Here is a great website for gifts to put in mason jars: http://www.tipjunkie.com/post/48-homemade-gifts-in-a-jar-2/

*Reuse those holiday gift bags from year to year.

Think about your circle of friends and decide who you want to continue to associate with, and who you need to negotiate your relationship with. If you don’t feel emotionally safe or respected around your friends, it's time to have a conversation about how you would like to be treated!
