SURPRISE! 🎉🤩🥳👏🏻
Some thing have been developing in my life over the past few months, and I’d now like to officially share them with you all. 🥁🥁🥁🥁🥁🥁
Do you ever wonder, “How can I do all the things in my heart?!” Sometimes we dream about doing multiple things with our lives, but it seems impossible for all of them to be actualized, because our capacity, and more than anything, our time, is limited.
And so, we must often live our life in seasons. And for me, unexpectedly, a new season has come. And with this new chapter, I must close some things from the previous one.
Since I was a 13 year old little girl, I have wanted to be a missionary and carry the love of Jesus overseas to people and places who’ve never known it. The day has now come for me to step into that calling.
This fall, I’M MOVING TO NORWAY TO BECOME A FULL-TIME MISSIONARY!!! 🇳🇴🇳🇴 🇳🇴 I will be serving as a staff member for the next two years with a ministry called Youth With A Mission ( .
In order to fully embrace this new season, I will be putting my business on the back burner until further notice. This is a very bitter-sweet thing for me, because I have been so absorbed in my business for the last 3 1/2 years and have loved serving my clients with my whole heart. But I am beyond excited to fully embrace this new season and all that it holds.

Here it is… 👀🙈🤩
For a LONG time, I have posted about this amazing beet soup I love called borscht. I eat it every month multiple times, if not weekly.
It is originally made in Slavic countries, and being that my dad travelled to Russia and Ukraine over 80 times total while I was growing up—it naturally became a favorite in our house.
With this soup, I have converted multiple beet-haters into beet-lovers.
With this soup, I have converted many soup-passivists into soup-addicts. (And I made up a new word along with it!) 🍲
So, while there are many EXCELLENT recipes out there, here’s my very own rendition.
BORSCHT:
Serves: 6-8

•1-1.5 lbs 100% grass-fed chuck roast, stew meat or ground beef

•4 cups organic beef broth (chicken broth works as well)

•1 large onion 🧅 , finely diced

•6-8 large cloves garlic 🧄, finely diced

•1 TBS sea salt, ¼ tsp pepper, and a dash of cayenne or red pepper flakes

•1 tsp fresh thyme, chopped (or ½ tsp dried thyme)

•3-4 large beets (or 6 small ones), peeled + chopped into ½ in. pieces

•3-4 large tomatoes 🍅, diced

•3 large carrots 🥕, chopped into ½ in. pieces

•½ of a small cabbage 🥬, finely shredded (roughly 2-3 cups)

•½  TBS fresh parsley (or 1 tsp dried)

•3-4 TBS fresh dill, finely chopped (Fresh is best!!! Or 1 ½  TBS dried dill)

•1 1/4 cups tomato purée 

•1 cup filtered water

•Optional toppings: a drizzle of olive oil for extra healthy fats; sauerkraut; a dollop of avocado oil mayonnaise, plain yogurt or sour-cream)

Instructions:

1. If using roast or stew meat, preheat the oven to 375 F. Combine the beef, salt and pepper, beef broth and thyme into an oven safe stock pot. Cook for 1 hour.  While the meat is cooking, sauté the onions and garlic in olive oil over medium heat 3-4 minutes, until slightly translucent and fragrant. Set aside. If using ground beef, add it to the onions and garlic and sauté until fully cooked. Season with salt and pepper. Set aside.

I LOVE FOOD! 😍🤤🎉🤩

And you might be surprised to find out that I love “fatty” foods like butter 🧈 — + classic comfort foods like creamy 🍅 soup and grilled cheese!

My favorite comments I get are when new clients come to me and start describing their current diet: “I try to eat healthy…but I probably eat way too much butter, and I like red meat too much…”

I start laughing and halt them right there!

“Don’t worry. I’m actually not gonna tell you to eat less butter. I might actually tell you to eat more! Let’s just talk about the quality…” (Kerrygold USA)

Half of what we eat is killing us not because it’s a “bad” food but because it’s a bad quality.

Imagine IF you could eat ALL the comfort foods you wanted everyday, as long as the quality was TOP NOTCH?!

This is me indulging in my current favorite! DF creamy tomato soup (snag the recipe ) and manchego (🐐) grilled cheese on GF whole-grain sourdough 🍞 by the one and only .

WHY DO HEALTH NERDS DRINK BONE BROTH??? 🤷🏼‍♀️👀🧐🤨

Do you ever roll your eyes at health 🥜s who just seem to go a little off the deep end? Kinda seem a little off their rocker? Drinking bone broth and apple cider vinegar and eating sauerkraut and taking supplements…yadyada.

There’s a reason behind almost everything health nuts do.

Let’s take a 👀 at bone broth:

1. It’s crazy rich in minerals. (I call it liquid gold.)

2. It’s rich in collagen. (Collagen is crucial for soooo many tissues in our body (especially connective tissues): digestive tract, ligaments, joints, etc.

These two things are key in addressing chronic pain.

Whenever I’m helping a client who needs to heal their gut: bone broth.

Be Right Back…

We all need space to breathe. Really breathe.

Sometimes social media becomes a background buzz, providing constant static. Sometimes it’s our “go-to” in every spare moment. Oftentimes, we’re scrolling mindlessly rather than connecting intentionally.

I want to use this platform to deliver content that gives my clients maximum value, rather than just adding to the buzz. To do that, I need to be clear with my own goals & focus.

So, for the next two weeks, from March 21-April 4, I will be stepping away from this social media platform.

And oftentimes, that’s the primary reason they’re coming to me. 

I love healing the gut because that USED TO BE one of my primary health concerns as well. It came in close second to my hormone imbalances.

I’m going back to school! 🤩🥳👏🏻

I literally love school. 🤓

Partly because I love learning, and partly because I learn best in a structured environment with assignments and deadlines.

I can’t count how many times in the last year I’ve said to my friends, “I wish I could go back to school!” “…I loved college!” “…Learning is so much fun”

Well, here I am! Not going back to “traditional” school—but today I’m starting B-school (Business School), by .

I LOVE the one-on-one work I do with my clients but have been sensing that I need some more training on the backend aspects of being a business owner. After the passing of my nephew, being self-employed has presented some challenges as I’ve waded through grief and tried to keep my vision clear. This journey made me realize I needed some more guidance on how to scale my business and take things to the next level. Thanks, for talking about your experience w/ B-school. It came at the perfect time, and now, I’m on that train too!

As a result of being in this condensed & intensive course, I may be a little bit less active on this platform temporarily, but in the long run, I’ll be more active than ever.

It’s my joy to serve you in your health and help you find NATURAL solutions for your health concerns. Now, it’s time for me to get trained to take it to the next level so that I can serve you and my future clients to the max!

I HAD NO STOMACH ACID!

If you read yesterday’s post, you now know that acid-reflux and heartburn are not caused by too much stomach acid—but too little!!!

Through various tests, when I was in Nutritional Therapy school, I discovered that I had almost no stomach acid! 😫(Stomach acid is what breaks your food down.)

—-NO WONDER I COULDN’T DIGEST ANYTHING and was constantly bloated, constipated, and miserable! 🤯🤯🤯

At that time, I started supplementing with hydrochloric acid (HCL) tablets. Whereas most of my other classmates needed several small tablets of additional HCL per meal (150 mg per tab), I needed 12-13!!! I was soooooo deficient. My gut was a mess.

Fast forward.

Today, I don’t even need 1 tablet per meal.

Through natural and effective Nutritional Therapies, my gut is now thriving. 💪🏻
