For today’s staycation, we went to the island of Dominica! We served up some plantain cups, stuffed with fresh avocado, red onion, tomatoes and seasoned with some fresh lime juice and salt and pepper! Our Dining Manager Darlene and her Kitchen Staff always go over the top good when it comes to celebrating a special day and today was one of them days! We started St. Patrick’s Day off just right with the best “Irish” lunch ever consisting of Irish Ham and Cabbage Soup, Corned Beef, Boiled Potatoes, Creamed Cabbage, Oat Molasses Bread and for Dessert an Irish Cheesecake! Then this afternoon we had a St. Patrick’s Day Party and served up Grasshopper’s for the drinks and for appetizers we had Pretzel Bites with a Cheese Dip, Irish Cheddar Biscuits and Open Faced Rueben Sandwiches! It was just all so so yummy! 🍀☘️🌈

Today we took our residents to Costa Rica for our monthly staycation! We served up Chorreadas for the appetizer, which is a Costa Rican Corn Pancake and for dessert we served a Costa Rican Chocolate Cake, which if you are a chocolate lover then this cake is for you!!
