Hearty Winter Veggie Soup 🍲
Ingredients:
1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
3 carrots, sliced
2 celery stalks, sliced
1 sweet potato, cubed
1 can diced tomatoes
4 cups vegetable broth
1 tsp thyme
Salt & pepper to taste
Optional: handful of kale or spinach
Instructions:
Heat olive oil in a pot, sauté onion & garlic until fragrant.
Add carrots, celery, and sweet potato; cook 5 mins.
Stir in tomatoes, broth, and thyme; simmer 20 mins until veggies are tender.
Add greens in the last 5 mins. Season to taste.
