Slow Cooker Chicken Enchilada Soup 🍲
Ingredients:
•41 oz (2.56 lbs) boneless skinless chicken breasts
•2 C fat-free, low sodium chicken broth
•1 can red enchilada sauce
•14 oz can fire-roasted diced tomatoes, with juice
•4 oz can diced green chilies
•1¾ C Rotel
•1 clove garlic, minced
•1 C green spring onion, peeled and diced
•1 t ground cumin
•½ t salt
•6 oz low fat cheddar cheese
1. Add first 10 ingredients in the slow cooker. Cook on low for 6-8 hours or high for 3-4 hours.
2. Garnish with 1 ounce of cheese per serving.
6 Servings; Per serving:
1 Lean | 3 Green | 3 Condiments
**You can also throw this in a stock pot for 20 minutes but would need to grill or bake the chicken first.
